Do you eat pork ribs and if so do you grill it or do it in the oven? This is how I made my ribs in the oven
Chipotle BBQ pork ribs (oven method)
This recipe combines the smoky, spicy flavor of chipotle with the sweetness of classic BBQ ribs, cooked tender in the oven.
Ingredients
2-2 ½ pounds pork baby back ribs or spareribs
For the Dry Rub: A blend of paprika, brown sugar, black pepper, salt, cocoa powder (optional), chili powder, onion powder, garlic powder, and cayenne powder.
For the Raspberry Chipotle BBQ Sauce: (adapted from Blackstone Winery) Canned chipotles in adobo sauce, reserved adobo sauce, seedless raspberry jam, lemon juice, salt, and ketchup.
Equipment
Large bowl
Heavy-duty aluminum foil
Baking sheet
Blender
Pastry brush
Instructions
Prepare the Ribs: Remove the membrane from the back of the ribs if necessary. Combine the dry rub ingredients in a bowl and coat the ribs generously. Wrap the ribs tightly in foil and refrigerate overnight (or at least 2 hours). Let the ribs sit at room temperature for 30 minutes before baking.
Make the Raspberry Chipotle BBQ Sauce: While the ribs are resting, blend all sauce ingredients until smooth.
Bake the Ribs: Preheat the oven to 250°F. Place the wrapped ribs on a baking sheet and bake for 2.5-3 hours, until tender.
Finish the Ribs: Carefully unwrap the ribs and increase the oven temperature to 325°F. Brush the ribs with BBQ sauce and bake for 15 minutes. Brush with more sauce and broil on high for 3-5 minutes, watching to prevent burning.
Serve: Let the ribs rest before cutting into individual portions. Serve with extra sauce.
Enjoy these delicious and tender chipotle BBQ ribs!
