It has been really hot in Colorado the last few days so Troy and I decided to make Poke bowls for lunch today!

I can't believe I waited so long to try this meal solution! It is so yummy and quick!

We did rice, shrimp, imitation Crab meat, mangos, edamame, and English cucumbers.

Troy had so much fun making this and it's his new Epicure favorite.

Despite the excuses, I hauled my @$$ out of the house and got to class. Because excuses DOESN'T get me to my goals!!!

It's a chilly day in Colorado, which is perfect for a healthy homemade ramen bowl from Epicure! 🍲

Tried a new Epicure recipe for dinner tonight! Lemon Chicken Orzo but I used pork tenderloin steaks instead if chicken thighs and I added zucchini and left out the capers.

I love being able to customize these meal solutions! This one was tasty and made so much...LEFTOVERS!
