At the heart of Viandas is a desire to contribute to community wellbeing. We buy from local farmers and food providers as much as possible, creating partnerships that are mutually beneficial. We recognize that not everyone has equal time or money to put into their food. Our current economic system does not reward service or care-oriented occupations equally to other career paths, yet we are collec

tively realizing their value and importance. We set up Viandas so as to allow subscribers to fund viandas for others who might not otherwise have access to them, because nourished communities thrive.

Buy locally grown and produced food!

If you’re in Chattanooga you can practice this wellness tip TODAY from 4-6pm, and every Wednesday, year round! The is one of the best things about Chattanooga. If you miss it today you can go to Gaining Ground in Highland Park Thurs - Sat from noon to 6pm.

Buying local supports our local economy, fosters community, and means fresher and more nutritious food for you and your family. While not all local farmers choose to pay for organic certifications, or to strictly adhere to the rules laid out by legislative bodies that are influenced by corporate lobbying. Some farmers may even utilize chemical fertilizers or pesticides in certain situations, but they generally use far less than industrial farms, thus helping to steward healthy soil, green spaces, and the diverse ecosystems we need for our survival.

Less trash is produced when we purchase food from farmer’s markets too, because many vendors will reuse containers over and over rather than packaging everything in single use plastic. Go on, you’ll surely discover your own reasons to support local food. Share them with us here!

Your wellness tip of the week is to gift yourself entrance into the magical multi-dimensional world of The Marginalian ( formerly known as Brainpickings). The main portal is through the website themarginalian.org, where Bulgarian born Brooklynite Maria Popova presents what are essentially book reports that highlight and draw parallels between enduring ideas offered by poets, scientists, children’s literature authors, philosophers, and other thoughtful observers of the phenomenon of life and it’s meaning.

In addition to hundreds of these nourishing and enlivening essays, another dimension to explore is The Universe in Verse, a gathering to celebrate “the wonder of reality through stories of science winged with poetry”. Now, thanks to her collaborations with dozens of artists, musicians, writers, and scientists, that celebration has been distilled into a series of short films. Chapter 1 is The Evolution of Life and the Birth of Ecology (with Emily Dickinson and Joan As Police Woman).

Sprouts are the best 🌱 They are super nutritious and brighten up any meal. They’re also fun to grow and so easy! While inexpensive sprouting kits are available, they are unnecessary. All you need is some tulle (the mesh fabric that makes tutus billowy) and a mason jar. You can sprout many legumes and some grains.

We love lentils because they become edible within just a couple of days, and because they taste sort of like peppery fresh peas. You can eat them by the handful, sprinkle them on salads, sandwiches, tacos, casseroles or soups. Sprouting grains and legumes actually increases their nutritional value! 🌱 🌱 🌱

Start with a cup of dry lentils and make more as needed. Put them in a mason jar and cover them in twice their height of water, secure the tulle with the threaded ring part of the lid. After 4-8 hours pour that water into one of your houseplants or use it to rinse dirty dishes. Then place the jar on its side, out of direct sunlight. 🌞

🫖 Rinse every 4-6 hours. They can be eaten as soon as the tip of the sprout breaks through, but you may prefer them longer. They become somewhat bitter if allowed to leaf, so it’s best to put them in the fridge once the sprouts are longer than an inch. The cold will slow their growth, but not stop it entirely. 🌱

Get creative with that rinse water. Even though this is a super verdant state it’s important to honor water by using it as many times as possible before it drains into the sewer to be chemically “treated” and dumped into rivers and lakes. 🌊

Did you know we offer gluten-free baked goods?! Our baked goods are all gluten free, no-refined-sugar treats that are super satiating. This week’s feature are the Nutmeg Muffins made with millet flour, almond flour, whole milk yogurt, chia seeds and coconut sugar.

Feature Friday! Have you heard?! We are partnering with Be Caffeinated Northshore. You can now find our gluten-free scones, muffins, and pepita truffles at their drive through location. We are so excited to be connected to such wonderful humans!

Local owner/founders Chris Wood and Doug Lee focus on providing a great cup of coffee fast and pride themselves in creating local partnerships by buying as many items locally as possible. They also support local charities and young businesses (like us) when they can. These two are very people focused and believe in bolstering our community here in beautiful Chattanooga, TN.

When you get a chance check out their coffee and pick up a few nutrient-dense bites to pair with your delicious beverage of choice. 🍪☕
