Palak Paneer is a popular Indian vegetarian dish made with fresh spinach (palak) and paneer (Indian cottage cheese) cooked in a flavorful, creamy tomato gravy. Here's a basic recipe to make delicious Palak Paneer at home:
Ingredients:
For the Palak Paste:
250g fresh spinach leaves (palak)
2-3 cups water (for blanching)
1 cup ice water (for blanching)
1 small onion, chopped
2-3 cloves garlic, minced
1-inch piece of ginger, minced
1-2 green chilies (adjust to your spice preference)
2 tablespoons oil
Salt, to taste
For the Gravy:
200g paneer, cubed
2 tablespoons oil or ghee (clarified butter)
1 teaspoon cumin seeds
1 large onion, finely chopped
2 tomatoes, chopped
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to your spice preference)
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt, to taste
1/2 cup heavy cream or yogurt (optional, for creaminess)
Instructions:
Prepare the Palak Paste:
a. Wash the spinach leaves thoroughly.
b. Bring a pot of water to a boil. Add a pinch of salt.
c. Add the spinach leaves to the boiling water and blanch them for about 2 minutes.
d. Immediately transfer the blanched spinach to a bowl of ice water to stop the cooking process.
e. Drain the spinach and blend it into a smooth paste along with onion, ginger, garlic, and green chilies. You can add a little water to facilitate blending if needed.
Cook the Gravy:
a. Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
b. Add chopped onions and sauté until they turn golden brown.
c. Add chopped tomatoes and cook until they become soft and the oil starts to separate.
d. Add turmeric, red chili powder, coriander powder, garam masala, and salt. Sauté for a few more minutes until the spices are well-cooked.
e. If you prefer a creamier texture, you can add heavy cream or yogurt at this stage and mix well.
Combine the Palak Paste and Gravy:
a. Add the spinach paste to the tomato-onion gravy and mix well.
b. Cook the mixture for 5-10 minutes on medium heat, stirring occasionally. If the mixture is too thick, you can add a little water to adjust the consistency.
Add Paneer:
a. Add the paneer cubes to the spinach and tomato gravy.
b. Let it simmer for a few minutes until the paneer cubes absorb the flavors and become tender. Be gentle when stirring to avoid breaking the paneer.
Serve:
a. Palak Paneer is best served hot. Garnish it with a dollop of butter or cream if desired.
b. It pairs well with naan, roti, paratha, or steamed rice.
