So after reading comments on a page I belong to, it's clear people don't really understand what Tallow is. Tallow is fat from a cow, deer, elk, moose, bear etc. There are 2 types of fat (suet), there is trim suet & organ suet. Both are Tallow but each is different in is composition. Trim suet is softer and requires more rendering, has more smell to it and a lower vitamin & nutrient makeup. Organ suet is cleaner, Highly concentrated in saturated triglycerides, essential fatty acids (Omega-3 and -6), and fat-soluble vitamins (A, D, E, K). It is the gold standard for premium skincare balms, creams, and traditional culinary baking.
Both however are Tallow. If you render your own then you know the difference and can see, feel, smell etc the difference and understand the process.
There are many Tallow products in stores that have been rendered and are being sold to cook with that have been sent through chemical cleaning processes to strip not only smell but nutrients from it (the Tallow at Costco, Sam's, Amazon) the Tallow the fda over sees.
