I challenged the current overgeneralized demonization of processed foods.

Perhaps it’s not processed foods that drive weight gain, but overconsumption, which can be significantly impacted by **hyperpalatable** processed foods

The simple-minded are always labeling things as “good” and “bad”.
Processed foods? BAD
Whole foods? GOOD

But in reality, everything has its appropriate dose.
Someone can gain weight eating only whole foods.
Someone can lose weight on only highly processed foods.

There is a lot of nuance in nutrition.
As a country, would we be healthier if we ate less processed foods?
Probably.
Does that mean you should never eat Oreos again, or feel guilt and shame for having one?
Absolutely not.

Here’s to redefining a healthy diet as something not charged with morality, good vs bad, and strict rules.
But discovering what overall eating pattern helps you fall in love with food, body, health, and life all over again!

I took another step toward being a registered dietitian today!!

✅ take science courses: biochem, organic chemistry, anatomy, physiology, microbiome, etc

✅ get my master’s

✅ apply for dietetic internship

get accepted from TAMU’s internship program!

Now we wait (by wait, I mean finish my LAST semester of class, while working on my PhD and doing the evidence-based nutrition research I love!!)

I and my fellow Nutrition PhD’s at Texas A&M presented our research at our annual 3 minute thesis competition; what an honor it is to receive this award!!

And be one of the 3 PhD students selected to present at the 2026 Lifedepartment at the Life Sciences Graduate Recruitment Symposium!

This is a win for the entire Evidence-Based Nutrition Lab with Dr. Bradley Johnston, and everyone who has supported and guided me on this journey!

As important as internal motivation and validation is… it is sweet to have a little external motivation along the way too🫶

As the semester and year is coming to a close, I’m on cloud 9 with how 2025 is ending✨

Next up:
- Finish dietetic courses in May 2026 (I’m already done with the science-heavy courses! Including biochem, genetics, microbiome, anatomy and physiology, and organic chemistry)

- 9-month dietetic internship starting August 2026 (complete rotations in a hospital, clinics, and sports)

- Take the Registered Dietitian Exam ~June 2027 to officially BE A REGISTERED DIETITIAN NUTRITIONIST🎉🎉

Then a couple more years to finish my PhD as well.

I never would have expected this path 7️⃣ years ago when I graduated with my undergrad in Kinesiology (can’t believe it’s been 7 years already!!), but it has been a dream come true☺️

Getting the itch again.

The insane thing is, it’s almost been 2 years since my last show.
Lifting 5x/week, no exception (except with an injury for ~1 week🤪)
Eating whole foods
99% of those meals I cooked (here are some of my favs!)
Hitting my protein goal
Hydrating
Eating my veggies
Using the FoodFlip Portion Method

And have I made progress? Likely.
Will I be able to hold onto the muscle I built when I get down to 7-8% body fat again? Maybe not.

Even if I look the same on stage as I did 2 YEARS ago, would this journey be a waste?
Not at all.

Body building has taught me so much, including:
Nutrition
Resilience
Optimizing meal prep
Hormones
Exercise science
Training SMART (avoiding trash volume!)
Pushing through discomfort
True grit
Consistency
Discipline
Mindfulness
Overriding physical survival instincts

I love taking a trip to the edge of what is possible for me.
It’s humbling,
it’s challenging,
it’s refining who I am,
and burns off weaker parts of me.
It’s only the strongest most resilient “no quit” parts of me that can make it thru something as challenging as prep.

2026 might be time to take a trip to the edge of myself again.

Being a PhD student + completing extra coursework to become a Registered Dietitian Nutritionist is hard.

Studying and completing classwork,
Test anxiety,
Going off-site to different food production sites,
Being a mentee (to an amazing Registered Dietitian mentor!!!)
Doing research
Packing meals (this snack is my go-to post workout!! Love it!)
Working out before class,
Eating in class,
Being a business owner,
Grading papers,
Early mornings and late nights.

But man is it also gratifying.
Love that I’m able to give back to my community at events, showing them how easy meal prep can really be.
I love to learn and discover things I never knew.
I love research and helping humanity continue to push the line between what is known and what is not.
I love living the life the Creator of the stars brought me to.

Praying He somehow gets me through it.
Just one day at a time🙏

My biggest supporter, comfort, advocate, jokester; right there with me being the calm thru my meltdowns, chatterboxy-ness, over the top enthusiasm, crazy ideas, and silly moments just being me🫶

Here’s to my second to last semester of classes at Texas A&M!
Then: 9 month dietetic internship,
then focus on research to finish my PhD in Nutrition, then full time FoodFlip
and expand my offerings to include Medical Nutritional Therapy as a Registered Dietitian Nutritionist & PhD!!😍😍😍
