Welcome to the ONE POT DINNER CLUB, where we’re making dinner ridiculously easy and keeping the dishes to a minimum.
Tonight, we’re making the coziest one-pot lasagna soup. Think all the cheesy, saucy comfort of lasagna without all the layering, baking, and extra dishes. Grab the FULL RECIPE below ⬇️
One-Pot Lasagna Soup 🍝
• 1 tbsp olive oil
• 1 small onion, diced
• 1 lb of ground meat of your choice (beef, turkey, chicken, sausage)
• 3 cloves garlic, minced
• 28 ounce can of crushed tomatoes
• 1 cup of tomato sauce or marinara
• 2 tbsp tomato paste
• 4-5 cups chicken or vegetable broth
• 8–10 lasagna noodles, broken into pieces
• 1 tsp Italian seasoning
• Salt + pepper, to taste
• 15 oz ricotta or cottage cheese
• 1–2 cups shredded mozzarella or Italian blend
• 1 tsp dried basil
• Parmesan + fresh basil, for topping
✨Cook the onion and garlic in olive oil on medium until translucent.
✨Add ground meat and cook until it is well browned.
✨Mix in the tomato paste. Then add crushed tomatoes, tomato sauce, Italian seasoning, and broth. Bring to a low boil and then add the broken lasagna noodles.
✨Lower the heat and simmer until the noodles are tender, stirring occasionally. About 20-30 min. *Make sure the noodles are covered by the sauce so they actually cook. You can add more broth if you feel like there’s not enough liquid.
✨I like to mix the ricotta, mozzarella, and dried basil in a separate bowl so I can add half of that mixture to the pot and leave half to dollop straight into the bowls as I serve it. But feel free to add it all straight to the pot to keep this truly a one pot meal!
✨Remove from heat, serve, and sprinkle with Parmesan, more mozzarella, basil, crushed red pepper, or oregano. You do you!
That’s it. A comforting and cozy dinner that’s all made in one pot so there’s minimal cleanup. It’s high in protein, delicious, and a favorite of my entire family.
