Dried herbs typically last 1 to 3 years, though their potency and flavor diminish significantly over time. While they do not spoil or become unsafe to consume if stored properly, they will lose their aromatic oils and become flavorless.
The exact shelf life depends on several factors:
Form: Whole herbs last longer than powdered or crushed herbs because less surface area is exposed to air and moisture.
Storage: Herbs stored in airtight containers in a cool, dark, and dry place (like a pantry) retain quality best. Exposure to heat, light, and humidity accelerates degradation.
Type: Some herbs like rosemary, sage, and thyme may remain flavorful for up to 3 years, while delicate herbs like dill, parsley, and cilantro lose potency much faster, often within 6 to 12 months.
To determine if dried herbs are still usable, perform a smell test; if the herb lacks a strong aroma, it has likely lost its flavor potency and will not contribute significantly to your dish.
