I love ordering a vegetable omelet filled with onions, peppers, and mushrooms when I eat out for breakfast. But what I've discovered I really love when cooking at home, is my veggies piled atop creamy and fluffy scrambled eggs. This way, I get way more veggies than I can place in a two-egg omelet.

Here, I've sautéed my veggies in coconut oil and spiced with Himalayan salt, freshly ground pepper, and sweet paprika. In the same pan, but separately, I've sautéed baby spinach, on which I lay the eggs. 😉

In a separate pan, I've scrambled my eggs, adding just a smidgen of goat cheese for added creaminess and flavor. But trust me, this meal is just as yummy dairy-free.
So, if you struggle with making a perfect veggie-filled omelet, stop resisting and think outside the omelet.

What's in the glass? Warm pot liquor. (Potlikker, as my Southern grandmother might have spelled it.)

Regardless of spelling, I'm talking about the vitamin and mineral-packed liquid that remains in the pot in which you steamed or boiled greens or vegetables. It's liquid you don't want to waste!

This morning, I steamed sweet potatoes in my Instant Pot. What remained was a slightly sweet liquid. I could hear my father's words reminding me: That's good potlikker!

So, save your vegetable liquid and use it as a soup base or a sauté liquid. Or just drink a warm glass.

Healthy in 15!
Healthy choices don't have to be so complicated. I use my Cuisinart Griddler to grill a moist chicken breast in 6 minutes. Add a dry rub of choice, drizzle olive oil, and include a side salad.

Eggs for Dinner!
I love playing in the kitchen. Tonight's meal is light and took only 15 minutes to make and plate.

I like eating a light meal in the evening, keeping my midday meal protein-packed for energy.

To make prep time a breeze, prepare some basics ahead of time.

For me, spending a 2 or 3 hours prepping and cooking veggies, quinoa, chicken breasts, or flavor-packed condiments...while listening to, say, some jazz...is time well spent on a Sunday afternoon.
