This post is long overdue!! I am so lucky to have an amazing neighbor who - when she has extra swag - shares!! She happened to have a surplus the most amazing 🥬🥬🥬bok choy I have ever seen much less tasted!

I love this special veg but I’ve never cooked with it because I’m the only one in my house who would eat it! So I was super excited to try out as many recipes as I could! I did a simple stir fry with just some garlic and spices just a little sear is all that’s needed!

Then I made a soup.

I will have to post about me and my terrible luck in trying to make soups throughout my adult life. Needless to say this was a huge moment for me because this was the very first soup I had ever made that actually turned out!!! It was perfect and that’s saying something. Was it the magical bok choy? 🥬🥬🥬probably.

Great ! Delish!

This vegan cake (no eggs or butter!) is so delicious that our kids begged for more. The frosting is silky smooth, and the cake is light and loaded with chocolate flavor, and healthy fats.

Y’all this was supposed to be the year I was just gonna BUY a cake for My sons birthday and not make one. But Whole Foods no longer makes vegan cakes in the bakery! I had discovered a great a couple years ago using box cake mix and soda. Kids love how it tastes (too sugary for me) -great for cupcakes I’ve learned over the years but far too crumbly as a cake! So I had to go back to a tried and true recipe from the cookbook and it turned out amazing!! Firm and easy to ice! So Relieved! (I’ll post an update after the volcano and dinosaurs cover up all my hard work)

When you FINALLY get your ass to the farmers market!!! And you go crazy!!!! So your dinner gets to be —-> cauliflower mash, green beans, fresh baked French and sourdough breads, grilled zucchini, Jersey sweet corn and heirloom tomatoes. 🎶these are a few of my favorite things🎶

So a day late but still you can ALWAYS make guacamole!! Our Cinco de Mayo celebration looks a lot like our “taco Tuesday” celebration but hey why mess with a good thing! This time fresh guac! Fresh garlic , avocados and soooo much lime! Don’t forget the cilantro! I always use fresh but I ran out so I found this like half dried half fresh one that says it’ll last 4 weeks in your fridge after opened?!? I’m game. It worked just have to use like double as you would with fresh. Oh and of course ya gotta have a Margarita - I take my in a bath after a very loooooong day how bout you? Hope everyone had a wonderful Cinco de Mayo!
