I know… corn gets a bad rap sometimes 🌽
But let’s be honest—sweet corn on the cob in the summer is hard to beat šŸ˜‹

This easy sheet pan shrimp boil is one of my favorites—simple, flavorful, and still nourishing (even without the butter… EVOO + seasoning works great šŸ™Œ). I added steamed broccoli to offset the inflammatory effects of the corn, but you can mix in whatever veggies you love.

Here’s the balance šŸ‘‡
Corn can spike blood sugar, so pairing it with protein + healthy fats makes a big difference.

And it’s not all bad—corn actually has some benefits too:

Lately, I’ve been trying to move forward in a few areas—especially when it comes to Abbey’s future and my own—and it just hasn’t felt easy.

It’s like I take a step forward… and then something shifts.

So I pause, reevaluate, and try again.

And honestly?
I keep coming back to this:
Surrender.
Not in my strength… but in His. šŸ™

Think again šŸ‘‡

This is one of my go-to recipes when I need something:
āœ”ļø easy
āœ”ļø high protein
āœ”ļø crowd-approved
Perfect for busy mornings, weekends, or hosting šŸ”

šŸ™Œ Clean Crockpot Egg Casserole
šŸ›’ What you need:
• 1 lb Italian or turkey sausage
• 12 large eggs
• 1 tsp fennel seeds
• 1 tsp olive oil
• 1 red bell pepper, diced
• 1/3 cup green onion
• 1/2 cup feta or goat cheese (or your favorite)
• 1 cup unsweetened milk (I like coconut milk)
• 1 Tbsp Dijon or dry mustard
• 1/4 tsp chili powder
• 1/4 tsp white pepper
• 1/2 tsp sea salt
• avocado cooking spray

šŸ‘©ā€šŸ³ What to do:
1ļøāƒ£ Whisk eggs, milk, mustard, and spices until frothy
2ļøāƒ£ Cook sausage + fennel in a pan until browned
3ļøāƒ£ Spray crockpot
4ļøāƒ£ Layer: sausage → veggies → cheese
5ļøāƒ£ Pour egg mixture over top
ā² Cook:
LOW 3–4 hrs or HIGH 1–2 hrs
(keep an eye on edges so it doesn’t overcook)
Let cool slightly, slice, and serve šŸ™Œ

Sometimes I’d rather save my carbs for chips or chocolate šŸ˜‹ so at lunch I’ll swap bread for lettuce wraps or these zero-carb wraps instead.

They are slightly sweet but don’t really have much flavor, which honestly makes the filling shine 🌯✨
