Meal prep: choose 1 or 2 days a week that you can chop, prepare, cook your vegetables so that you have them available ahead of time. It’s makes it so much easier when you can just warm them up, or pull a fresh salad out of the fridge that’s already been prepared. .
I have really been enjoying earthy, root vegetables lately. Anyone else? This week I prepped turnips (that’s the purple/white veggie), boiled yellow beets (one of my favorites!), zucchini and brussel sprouts. .
One word of advice - don’t overwhelm yourself by prepping tons of meals (at least not in the beginning). Just choose one thing - like your vegetables, or cook a whole chicken, or beans/lentils, or a boiled eggs. Build your confidence and create a habit little by little. Sometimes I take on more than I can handle and get overwhelmed and just quit all together. So take it slow. .
