Ensalada de Sandia 🍉🥰 Watermelon Salad

Sweet, fresh & perfect for summer! This chilled watermelon salad is everything you need right now 🌿

What you'll need:
🍉 Watermelon, cubed (4cups)
🧅 Fennel, thinly sliced
🌿 Fresh basil & mint
🧀 Feta cheese, crumbled (1/2 cup)
🍋 Lime juice (1/4 cup)
🫒 Olive oil (2tsp) & white wine vinegar (1tsp)
🧂 Salt & pepper

How to make it:
1. Whisk together lime juice, olive oil, vinegar, salt & pepper
2. Toss with watermelon, fennel, basil & mint
3. Gently fold in feta
4. Chill for 30 minutes & serve cold
