The Courage to be Myself

So often I look to others for answers, for approval when everything I need is inside of me!

So this is the year of having the Courage to by myself.

CHRISTMAS HUMMUS RING
Ingredients
1 (17-ounce) container of purchased plain hummus (or use your make your own)
1/2 cup crumbled feta cheese
1/4 cup thinly sliced green onions (from about 2 onions)
3/4 cup chopped Italian flat-leaf parsley
1 teaspoon extra virgin olive oil
1/16 teaspoon kosher salt
cherry tomatoes, halved (I used 4 1/2 tomatoes for the wreath pictured in this post)
1 large red pepper, optional (look for one with broad, flat sides) Truth be told- I will most likely skip this
1 - 1 1/2 tablespoons very finely crumbled, feta cheese
optional dippers for serving: whole-grain pita chips, wedges of whole-wheat pita bread, or red and green veggies

Instructions
In a medium-sized bowl, combine hummus, 1/2 cup feta, and green onions.
Place a small bowl or drinking glass in the center of a large, round platter. You'll use that bowl for the pita chips and/or veggies. Use a rubber scraper to spread the hummus mixture in a circle all around the bowl/glass you placed at the center.
In another small bowl, toss parsley, oil, and salt until the parsley is thoroughly coated and the oil and salt are evenly distributed. Spoon parsley mixture in a circle on top of the hummus layer, leaving a small border of hummus showing all around.
Place halved cherry tomatoes, cut-side down, randomly throughout the parsley layer, so they look like Christmas ornaments. (I'll add the kalamata olives here too)
If making the optional bow out of red pepper, cut one broad, flat side off the pepper (as shown in the photo in our post), and gently but firmly press a metal, bow-shaped cookie cutter through the pepper slice to cut out your bow. Place the bow on your wreath.
Sprinkle entire wreath lightly with a dusting of 1 - 1 1/2 tablespoons very finely crumbled feta, to look like snow. You can adjust the exact amount of feta, depending on the diameter of your wreath – you want it to look like just a light dusting, without using so much feta that it hides the other ingredients.

Serve immediately with dippers of your choice, or cover and refrigerate for up to 1-2 days. (See make-ahead tips below.)

As I was watching the last 2 miles of Chris Nikic's journey to be the first person to finish the Ironman with Downs Syndrome, I came across some lessons.

You can attain your goals, you just may need guidance.

You may need a team of people to aupport snd encourage you along the way.

The only person holding you back is you! The self talk telling you that "you can't"

Follow the light of others as it is showing you the direction to go.

Take it on step at a time and go at the pace you feel comfortable with.

Find that team of people who will uplift you

No GOAL is out of your REACH! (Reminder to myself)

Ever grab the product on the shelf that says “Sugar Free”, “No Sugar” or “Diet” because you think it’s the healthier alternative? THINK AGAIN! Although some times that could be the case, CHECK THE LABELS and compare them. Most products that are labeled this way are loaded with artificial sweeteners (Aspartame and Sucralose) and flavors which are so much worse for you than REAL sugar and naturally sweetened/flavored products.

And if you’re watching your sugar intake as we all should.. look for things NATURALLY sweetened. Fructose, Honey, Chia Seed, Molasses, Agave Nectar, just to name a few 🙃

Of course we’re not all perfect, and I will never pretend to be, not everything in my pantry is the best. But when I have the choice, I try my best to go with what I think is the healthiest. And I always try to educate myself on better choices.

I am sure somedays you feel like my grandson.

A little off balance as the weight of the world is pulling at you. His backpack was so heavy it pulled him back and he got a little freaked out as his face shows.

So what do you do when you get freaked out with the world pulling at you?

Stop and breathe
Meditate
Journal
Set a 6 list of things to complete
Find an accountability partner
Find a coach

Make sure you check in with yourself and see if the world is pulling you off balance.

Gratitude: the quality of being thankful, readiness to show appreciation for and to return kindness.

This is a practice I start and end my day with. Since starting this practice I have found I have more peace in my life.

Yes I understand that things happen throughout our days that are out of our control, and tend to shake out worlds up.

Take a step back, breathe, speak gratitude for what you are about to learn and then deal with what just went on.

I know this is easier said than done however once you do this your world will have changed.

I have stopped watch the news. I have people who tell me whats out in the world and when they do I say a prayer and let it go. I see how much what is going on in the world consume people instead of allowing you to live your life.
