🥣 NOURISH & RESTORE: Ginger-Turmeric Healing Soup 🌿

👩🍳 Ingredients
• 1 lb chicken thighs (or breasts)
• 8 cups chicken broth (low sodium)
• 2 Tbsp avocado oil
• 1 Tbsp sesame oil
• 2 cups sliced yellow onion
• 4 cloves garlic, minced
• 1 inch fresh ginger, thinly sliced
• ½ cup jasmine rice (uncooked)
• 3 cups chopped baby bok choy
• 3 Tbsp tamari or soy sauce
• 1 Tbsp rice vinegar
• ½ tsp turmeric
• ½ tsp ground coriander
• Juice of ½ lime
• Salt & pepper to taste
• Garnish: cilantro, sesame seeds, chili oil, lime wedge

🔥 Directions
1️⃣ In a large pot, heat avocado and sesame oil.
2️⃣ Add onions, garlic, ginger — sauté until golden and fragrant.
3️⃣ Stir in broth, tamari, rice vinegar, turmeric, and coriander.
4️⃣ Add chicken and rice. Simmer 20 min until tender.
5️⃣ Remove chicken, shred, and return to the pot.
6️⃣ Add bok choy and cook 3-4 min until bright green.
7️⃣ Finish with lime juice. Adjust seasoning.
Serve warm with toppings and enjoy a nourishing bowl of comfort.
