My first attempt at a vegan 🌱 Reuben sandwich. If you know me, I modify recipes as needed to match what is in fridge. Sour dough instead of rye. My Russian dressing was some vegan mayo, sriracha, rice vinegar, garlic powder, paprika and a splash of soy sauce. I thinly sliced extra firm tofu. The goal was to eat more fermented foods, so I added a medley of beets, carrots and cabbage sauerkraut. Delicious! kraut
