Healthy & Easy Weeknight Chicken Dinner

Ingredients
For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp cumin
½ tsp salt
¼ tsp black pepper
¼ tsp chili powder (optional)
For the Potato Wedges:
3 medium potatoes, cut into wedges
1 tbsp olive oil
½ tsp paprika
½ tsp garlic powder
Salt and pepper to taste
For the Avocado Corn Salsa:
1 avocado, diced
1 cup corn kernels (fresh or canned)
½ cup cherry tomatoes, diced
¼ cup cucumber, diced
2 tbsp red onion, finely chopped
1 tbsp lime juice
1 tbsp chopped cilantro (optional)
Salt and pepper to taste
Instructions
Prepare the Potatoes
Preheat oven to 425°F (220°C).
Toss potato wedges with olive oil, paprika, garlic powder, salt, and pepper.
Bake for 30–35 minutes, flipping halfway, until golden and crispy.
Cook the Chicken
Mix all chicken seasonings together.
Rub chicken breasts with olive oil and coat evenly with the spice mixture.
Heat a skillet or grill pan over medium-high heat.
Cook chicken for 6–7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Let rest for 5 minutes before slicing.
Make the Salsa
In a bowl, combine avocado, corn, tomatoes, cucumber, red onion, lime juice, cilantro, salt, and pepper.
Gently toss until mixed.
Serve
Plate the sliced chicken with crispy potato wedges and a generous scoop of avocado corn salsa.
Serve immediately with extra lime wedges if desired.
