Grilled Chick Salad + Homemade Sweet Onion Dressing


{ THIS is the drop-what-youre-doing, make new plans around this salad kind of post.

Include this in your weekend plans! Bring it to a party, or invite a few of your favorite people over and celebrate LIFE }

makes 4 servings

Ingredients:
4 boneless skinless chicken fillets, about 5 oz each
1 Tbsp avocado oil, or olive oil
8 packed cups mixed lettuce leaves
1 cup cooked fresh or thawed frozen organic corn kernels
1.5 cups halved cherry tomatoes
1/3 cup chopped pecans
4 hard-boiled eggs, peeled and chopped
1 ripe avocado, diced

Sweet Onion Dressing:
2 fresh garlic cloves, pressed
1 small sweet onion, chopped
4 Tbsps extra virgin olive oil, divided
1/4 cup apple cider vinegar
1/2 a fresh lemon, juiced
sea salt and freshly ground pepper

Instructions:
Heat a grill pan or an outside grill on medium high heat. Rub chicken with sea salt, pepper and a bit of oil, then add it to the grill. Cook for about 5 minutes per side, or until cooked through and no longer pink in the inside. Set aside on a chopping board, cover and rest for a couple of minutes, then slice thin.

Heat 1 Tbsp oil in a skillet over medium high heat; Saute garlic and onions for 6 minutes, or until soft and golden brown. Place camelized garlic & onions in a small blender together with remaining extra virgin olive oil, cider vinegar and lemon juice; puree until smooth.
Season to your taste with sea salt & pepper, then refrigerate dressing until ready to serve.

In a large salad bowl, add lettuce, then cooked chicken, tomatoes, corn, eggs, pecans, and diced avocado as shown.

Once ready to serve drizzle the dressing on top, and gently toss to combine.
Enjoy!

My lunch today was super easy to throw together and really hit the spot. Tuna 🐟 with mashed avocado 🥑 on little sourdough toasts with lemony white beans over arugula, cherry tomatoes 🍅, chopped red onion 🧅 and kalamata olives. I used canned tuna packed in olive oil with a squeeze of lemon and the white beans were tossed in extra virgin olive oil, fresh lemon juice, sea salt and cracked black pepper. It was a nourishing and delicious meal. Hope you’re having a great day!

Spaghetti squash alfredooo 🌱🍝🥰 Not to be dramatic, but this might be the best thing I’ve made all year. It’s the kind of comfort food that calls for cuddles on the couch (my move last night), satisfies carby noodle cravings, aaand packs several servings of veggies. That’s what we call a win-win-win din 👏🏻.

Love this SPICY GARLIC CAJUN SHRIMP dinner idea 😍🙌🏼
spicy garlic cajun shrimp, creamy garli-cauliflower sauce shells 🐚, and grilled asparagus.
What you see:
Spicy garlic cajun shrimp (season shrimp with Primal Palate jerk seasoning + paprika, then sauté in garlic ghee until pink and slightly brown)
Eat Banza chickpea pasta shells tossed in creamy garlic-cauliflower sauce (recipe a few posts back on her page— this is one of my favorite sauces ever!)
Grilled asparagus topped with parmesan.

Creamy Mushroom Stroganoff🍝 A creamy and super satisfying pasta recipe you need to try out! Check out the recipe:
📋Ingredients

1 onion diced

2-3 cloves of garlic, minced

1 tbsp vegetable oil

11 oz mushrooms, sliced (300 g)

4 tbsp white wine (optional)

1 tbsp tamari or soy sauce

3/4 cup vegetable broth or water (180 ml)

3/4 cup plant-based milk or cream (180 ml)

2 tbsp cornstarch

Spice mixture: 1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, a pinch of chili flakes, sea salt & pepper to taste

1 tbsp nutritional yeast flakes (optional)

Fresh thyme leaves and/or parsley (and/or tarragon), chopped

Serve with brown rice or pasta of choice

Instructions

Heat oil in a large pan/skillet, add onion and fry for about 5 minutes. Add garlic and fry for a further 1 minute.

Now add the mushrooms and fry over medium heat for about 5 mins.

Pour in white wine (optional), vegetable broth, tamari (or soy sauce), and the spice mixture. I love adding nutritional yeast flakes as well but that's optional! Bring to a boil.

Add cornstarch to the plant-based milk or cream (I used canned coconut milk, however, almond milk, oat milk/cream or soy milk/cream is fine too) and stir to dissolve.

Pour the milk/cream mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens. Taste and adjust seasonings as to your preference.

Add fresh thyme leaves and/or parsley and/or tarragon to taste! Enjoy with brown rice or pasta of choice!

Jalapeño & Bacon Stuffed Chicken🔥🔥

Hey, this one is fire! I’m in love with the hint of jalapeño in them. It just makes the flavors pop! Yesterday I posted a roundup of stuffed chicken ideas & this one takes the crown for my current FAVORITE. Simple recipe below✨

Since I love stuffed recipes, I’m open to any ideas to create in the future. Let me know👏🏼


Slice chicken down the side to create a pocket
Rub olive oil over chicken & sprinkle 1tbsp
roasted garlic & lemon pepper seasoning
Stuff chicken with chopped uncured bacon, a half slice of swiss cheese & 1tbsp diced jalapeños in each
Place on baking sheet & cover with aluminum
Bake in oven at 375 for 20min
Then take out, add a little shredded cheddar cheese inside each chicken (optional to make it cheesier)
Crisp up in air fryer at 320 for 3min
