Seed oils have been the villain of wellness for years but when I looked at the actual science, I had to rethink everything.
The Global Burden of Disease study, one of the largest nutrition studies ever conducted, consistently ranks low fiber intake as a top driver of metabolic dysfunction.
Not seed oils.
Most Americans get around 10 grams of fiber a day. We need 25–38. That gap is linked to insulin resistance, visceral fat, inflammation, and increased disease risk. No oil swap in the world closes that gap.
I'm in my 60s, plant-based, and thriving in menopause and fiber is one of the main reasons why. It feeds your gut microbiome, slows glucose absorption, and helps regulate the hormones that make fat loss so hard during this season of life.
So instead of auditing my pantry for seed oils, I focus on what the research actually supports.
