Nourishment goes far beyond what’s on the plate… but let’s start here šŸ’›

Inspired by Diet for the Mind and a simple, intentional meal: blackened tilapia, herbed rice, and pinto beans with onions + tomatoes. This plate is packed with high-quality protein for muscle repair, omega-3s to support brain health, fiber for digestion and blood sugar balance, and key minerals like iron, magnesium, and potassium to keep the body functioning at its best.

But true nourishment isn’t just food.
It’s sleep.
It’s movement.
It’s stillness.
It’s the thoughts we allow and the energy we carry.

We say we want a healthy life… a peaceful life…
but we have to be willing to do the work to create it.

It’s salad season šŸ„—āœØ

As much as I love my warm, comforting meals, there’s something so refreshing about this time of year—especially when the farmers market starts overflowing with fresh, vibrant produce.

Today’s bowl: Romaine, mini peppers, tomatoes, cucumbers, cashews, avocado, and air-fried salmon, topped with Trader Joe’s toasted sesame dressing… absolutely divine. No crackers, no bread—just simple, satisfying, nutrient-dense goodness that actually fills you up.

Also… I’ll never fully understand when people say they ā€œcan’t cook for one (or two).ā€ It’s honestly so doable—and even enjoyable once you get into the rhythm.

Feeling really grateful for the inspiration to nourish myself this way šŸ¤ And if you’re curious, I might be opening the door to clients again soon… I’d love to show you how simple this can be.

There’s something really special about cooking for the people you love šŸ¤

This weekend I made chicken piccata for my family—so simple, so delicious, and honestly such a joy to create. It reminded me that cooking isn’t a chore… it’s a gift. A way to slow down, to be present, and to nourish both the body and the spirit.

In a world that moves fast, this is one of the ways we can come back to what matters. Sharing a meal, creating something with intention, and savoring it together.
Maybe it’s time we shift the perspective—from ā€œI have to cookā€ to ā€œI get to create something meaningful.ā€

What we put on our plates today is an investment in the body we’ll live in decades from now.
As I’m diving into The Blue Zones Solution for my RDE continuing education credits, I’m reminded again how powerful simple, real foods can be.

This morning’s plate: organic eggs with a sprinkle of feta, capers, homemade hummus, and crisp cucumbers.
Nourishing, balanced, and aligned with the long-term vitality we all deserve.

Farm-fresh dinner gratitude šŸ§‘ā€šŸŒ¾

This dinner contains a free-range chicken breast (literally from my friend’s local farm, processed just days ago — so fresh!) paired with ā€œsavor-the-flavorā€ lemon-dill rice, and spinach sautĆ©ed in white wine, olive oil, and fresh garlic.

Yes, animal protein is inflammatory in some contexts … but when we’re thoughtful about how and where we source it, and balance it with the right veggies and whole foods, the nutritive value can be so much more meaningful.

When animals are killed in stressful conditions (transport, unfamiliar slaughterhouses, etc.), their cortisol (stress hormone) levels can be elevated. High stress in animals can affect meat quality, and while the idea that all that cortisol transfers directly into our bloodstream isn’t super clear-cut, there is evidence showing that stress hormones are higher in meat from more stressed animals.

Here’s why the rest of this dinner matters:
šŸ’›Veggie balance: Pairing the chicken with organic spinach helps buffer inflammation.
šŸ’›Sauteed spinach = pro-nutrient absorption: Cooking spinach in olive oil helps unlock its micronutrients and makes them more bioavailable.
šŸ’›Healthy fat from olive oil helps with nutrient absorption and supports anti-inflammatory pathways.

Eating this way isn’t perfect, but it’s intentional: sourcing local, respecting animal life, and supporting my body with real, whole food.

Thank goodness I’m not afraid of carbs! šŸšŸ’› There’s something so nourishing about a meal that tastes amazing and is shared with people you love. In the blue zones—places where people live the longest—one key to longevity is savoring your food and enjoying the company around you.

The problem with strict diet and exercise programs? They demand long-term discipline and rigid routines—both of which go against human nature. Most people stick with a diet for less than 7 months; of 100 people who start today, fewer than 5 are still on that plan two years later.

Food should nourish your body and your soul, not feel like a punishment. Eat well, savor every bite, and enjoy the moments that come with it. šŸ’›āœØ
