Cook the asparagusHeat olive oil or butter in a pan and sauté asparagus 4–5 minutes until bright green and slightly tender.

Boil water for poachingBring a small pot of water to a gentle simmer and add vinegar.

Poach the eggsCrack each egg into a small bowl, swirl the water, gently slide the egg in, and poach 3 minutes for a soft yolk.

AssemblePlace asparagus on a plate, top with poached eggs, season with salt, pepper, and optional Parmesan.

granulated erythritol (or monk fruit)

melted butter
1 tsp
vanilla extract
1 tsp
baking powder
1 tsp
pumpkin spice
1/2 tsp
cinnamon

Instructions

PreheatPreheat oven to 350°F (180°C) and line a muffin tray with cups.

Mix dry ingredientsIn a bowl, whisk almond flour, coconut flour, erythritol, baking powder, pumpkin spice, cinnamon, and salt.
