One thing I've learned after years of meal prepping is that the best meal prep recipes don't feel like meal prep.

They need recipes they'll actually make on a busy week.

This Sheet Pan Chimichurri Chicken and Veggies checks all the boxes:

✅ High protein
✅ One pan
✅ Easy cleanup
✅ Reheats well
✅ Packed with flavor

Because let's be honest... plain chicken, rice, and broccoli gets old (for some). 😜

The homemade chimichurri is what takes this one from "meal prep" to "I can't wait for lunch."

Ingredients
Chicken + Veggies:
• 1.5 lbs boneless, skinless chicken thighs
• 1 lb mini baby dutch yellow potatoes, quartered
• 3 cups fresh green beans, trimmed
• 3 tbsp avocado oil
• 2 tsp black pepper
• 1 tsp pink Himalayan salt

Chimichurri:
• 1 bunch flat-leaf parsley
• 1 bunch cilantro
• Juice of 1 lemon
• Juice of 1 lime
• 2 garlic cloves
• ½ cup olive oil
• 2 tbsp red onion
• 2 tsp pink Himalayan salt
• ¼ tsp red chili pepper flakes

Roast the chicken, potatoes, and green beans on a sheet pan, blend up the chimichurri, and portion everything into containers.

20 Minute Steak & Avocado Salad Bowl 🔥🥩🥑

Most people think eating high-protein means eating the same boring meals over and over.

I disagree.

One of the easiest ways to stay consistent is finding meals that check all the boxes:

✅ High protein
✅ Loaded with healthy fats
✅ Lots of volume from veggies
✅ Actually tastes good

This Steak & Avocado Salad Bowl does exactly that.

Whether you’re eating lower carb, trying to increase your protein intake, or just looking for a lunch that keeps you full, this one deserves a spot in your rotation.

Ingredients:
• 1.5 lb sirloin steak (or your favorite cut)
• 2 avocados
• 1 large cucumber
• 4 green onions
• 2 jalapeños
• 1 large lemon
• 8 cups romaine lettuce
• ¼ cup extra virgin olive oil
• 2 tbsp parsley
• 1 tsp garlic powder
• 1 tsp chili powder
• 2 tbsp salt & pepper

Directions:
1️⃣ Season steak with salt, pepper, garlic powder, and chili powder. Cook in olive oil on a cast iron skillet for about 6 minutes per side, or until your preferred doneness. (A grill works great too.)

2️⃣ Remove steak and let it rest.

3️⃣ In a jar, combine olive oil, lemon juice, parsley, salt, and pepper. Shake well to make the dressing.

4️⃣ Add chopped romaine, green onions, jalapeños, cucumber, avocado, and sliced steak to a large bowl.

5️⃣ Pour dressing over the top and toss everything together.

6️⃣ Portion into meal prep containers and enjoy throughout the week.

💪 Approximate macros per serving (4 servings):
• 530 calories
• 38g protein
• 17g carbs
• 35g fat

Most people focus on the seasoning when roasting potatoes.

But the side touching the pan can make just as much of a difference.

I tested Japanese sweet potatoes both ways:

🥔 Skin-side up
🥔 Skin-side down

Same potatoes. Same oil. Same seasoning. Same oven.

The version with the cut side against the pan developed a deeper caramelization and brought out even more of the natural sweetness.

It’s a small detail, but sometimes the smallest changes create the biggest improvements in flavor.

I was cooking at the Haas Race Team HQ and got to try something I’d never used before… the SLOTDOG. 🌭🏁

It’s a simple tool that puts a crosshatch pattern into your hot dog… crazy right?!

The cuts create more surface area for sauces, mustard, chili, or whatever toppings you’re into. 🙌🏽

Plus, those edges crisp up on the grill and add a really cool texture that you don’t get with a regular hot dog. 🤯
