I’m leaning fully into viral recipes this year. Here are five reasons why I’m all in on this trend:

1. Eating is supposed to be a joy. That means eating food that actually tastes good. There are plenty of viral recipes out there that are legitimately delicious and I’m tired of people pretending they aren’t.

2. Inspiration is the hardest part of staying on track. The biggest reason people fall off is because they get bored. I’ve never been the guy who can eat the same meal every single day. Viral recipes are basically a cheat code for a great new meal to try.

3. They’re just fun. You get to be part of the trend without having to film yourself doing a viral dance. I think we can all agree that’s a win for everyone 😂

4. They usually solve a problem. Most things go viral because they’re either faster, easier, or a smarter way to hit your goals. If it’s high protein and takes ten minutes, I’m in.

5. The organization is the only catch. I spend way too much time scrolling back through my saved folders to find that one video from three weeks ago. It’s a massive pain and I’m definitely looking for a better way to fix that for all of us.
Keep an eye out because I might have a solution for that coming soon. 👀

Craving Mac & Cheese? 🧀 Let’s make it high-protein and delicious! This Buffalo Chicken Mac & Cheese is just 500 calories and packed with 50g of protein.

🛒 Ingredients:
• 1 cup Cottage cheese
• 1 cup Shredded cheddar cheese
• 1 cup Almond milk
• 1 tbsp Cornstarch
• Seasoning: Paprika, dry mustard, pepper, garlic powder
• 1 box Banza pasta
• 1 Rotisserie chicken, shredded
• Buffalo sauce (I love a sweet & spicy wing sauce!)

👨‍🍳 Instructions:
1. Blend the base: In a blender, combine cottage cheese, shredded cheddar, and almond milk. Blend until smooth.
2. Spice it up: Add cornstarch, paprika, dry mustard, pepper, and garlic powder. Blend again.
3. Cook the pasta: Prepare your Banza pasta according to the package directions.
4. Shred the chicken: Shred your rotisserie chicken into bite-sized pieces.
5. Combine & heat: In a pot, combine the cheese sauce, shredded chicken, and cooked pasta. Heat over medium-low until warmed through and the sauce has thickened.
6. Serve: Dish it up and top with plenty of your favorite buffalo sauce!

I used 6oz of grilled chicken seasoned with the essentials (salt, pepper, garlic) and a Carb Balance wrap to keep the protein high and the net carbs low. The “wrap pyramid” is optional, but highly recommended for the vibes.

Ingredients:
• 1 Mission Carb Balance Tortilla (Large)
• 6oz Grilled Chicken Breast (Seasoned with Salt, Pepper, Garlic)
• 1.5 cups Bagged Caesar Salad Mix (Lettuce + Croutons)
• 2 tbsp Caesar Dressing
• 1 tbsp Shaved Parmesan
