Batch cook chili for a healthy start on meals for the New Year! Great nutrients in all the beans and grains and veggies and greens! It's easy to make a large batch for supper and to modify some for upcoming meals: Start with dicing and sautéing (in veggie broth) 1 onion, bell pepper, jalapeño pepper, and 3 cloves minced garlic....let soften and release their juice, then stir in the seasoning: 3 Tbsp chili powder, 2 Tsp ground cumin, 1 Tsp smoked paprika, 1 Tsp oregano; Use low sodium - Add 28 oz can diced tomatoes, 15 oz Kidney Beans, 15 oz Black beans, 15 oz Pinto (or other of choice)15 oz corn; stir well and simmer for at least 30 minutes to meld the flavors (add pepper, more chili powder to taste). Serve over rice with a lovely green salad. Use the extra for meals with variations: 1. Add your favorite salsa and serve in corn Tortillas or tacos 2. Add chopped zucchini and/or baked sweet potato and reheat. 3. Add a cup of this chili to your favorite tomato sauce and serve over a chick pea (or other legume) pasta. 4. Mix some in with your tofu scrambles! 5. Enjoy another chili night! Batch cook once to create several more easy meals for the week!
