Healthy Eating Adventure Healthy Eating Adventures are fun, community-based programs focusing on whole foods, plant based eating, learning and sharing of recipes and support.

An Adventure is a 28-day program that can kickstart you on a lifetime of healthier eating, with a whole foods, plant based lifestyle. Our programs are held at various locations throughout Franklin County, PA; participants also come from beyond the county and sometimes participate at a distance with family and friends. The goal of the adventures is to not only promote individual health, but also to

cultivate local plant-based communities. Healthy Eating Adventures are supported in part by a grant from Summit Endowment.

Beautiful and nutritious Royal Trumpet Mushrooms....season and air fry as an hors d'oeuvre or add them to an entree! Wash, slice sprinkle with onion, garlic and ginger powder, then massage with a bit of tomato paste to help your favorite green herbs stick (such as thyme, basil & rosemary), air fry 15-20 minutes (or roast at 400). Mushrooms have the antioxidants ergothioneine and glutathione (and many other nutrients) that go to work protecting against cognitive decline, and depression and anxiety! And mushrooms grown outside are a good source of Vitamin D!!

Batch cook chili for a healthy start on meals for the New Year! Great nutrients in all the beans and grains and veggies and greens! It's easy to make a large batch for supper and to modify some for upcoming meals: Start with dicing and sautéing (in veggie broth) 1 onion, bell pepper, jalapeño pepper, and 3 cloves minced garlic....let soften and release their juice, then stir in the seasoning: 3 Tbsp chili powder, 2 Tsp ground cumin, 1 Tsp smoked paprika, 1 Tsp oregano; Use low sodium - Add 28 oz can diced tomatoes, 15 oz Kidney Beans, 15 oz Black beans, 15 oz Pinto (or other of choice)15 oz corn; stir well and simmer for at least 30 minutes to meld the flavors (add pepper, more chili powder to taste). Serve over rice with a lovely green salad. Use the extra for meals with variations: 1. Add your favorite salsa and serve in corn Tortillas or tacos 2. Add chopped zucchini and/or baked sweet potato and reheat. 3. Add a cup of this chili to your favorite tomato sauce and serve over a chick pea (or other legume) pasta. 4. Mix some in with your tofu scrambles! 5. Enjoy another chili night! Batch cook once to create several more easy meals for the week!
