Cheesecake breakfast muffins
Filling
24 oz cream cheese, softened
¾ cup powdered erythritol or monk fruit
3 large eggs
1 cup sour cream
1 tsp vanilla
1 Tbsp lemon juice

Bake 325°F for 25-30 min, center slightly jiggly. Cool → chill 4 hrs.

If your looking for a high protein, low carb breakfast that comes together in a pinch, this one’s for you.

RECIPE - Makes 4 servings
INGREDIENTS:
4 large eggs
1 cup liquid egg whites
1/2 cup cottage cheese
3 mini bell peppers, diced
1/2 of an onion, diced
1/4 cup cooked turkey sausage crumbles (prefer Jimmy Deans)
1/4 cups cheddar cheese
salt & pepper to taste
Optional: 1/8 tsp dry mustard

DIRECTIONS:
1. Preheat oven to 350 F.
2. Whisk the eggs and the egg whites.
3. Add in the veggies, cottage cheese, salt and pepper and stir to combine.
4. Pour into a small, greased baking dish or ramekins.
5. Top with the sausage crumbles and cheese and bake for 35-40 (baking dish) or 20-25 (ramekins) minutes or until no longer jiggly in the center.

This incredible no-bake keto pecan pie cheesecake has a cream cheese filling on top of a salty keto pecan crust. 4g net carbs per serving!

Ingredients
Keto Pecan Pie Crust
2 cups Ground Pecans
1/2 tsp Vanilla Extract
1/8 tsp Almond Extract
6 tbsp Butter melted
1/4 cup Swerve Confectioners Sugar Substitute
Cheesecake Filling
16 ounces Cream Cheese softened
1/3 cup Swerve Confectioners Sugar Substitute
1 tsp Vanilla Extract
1 cup Heavy Whipping Cream
1/2 tsp Cinnamon
Keto Pecan Topping
4 tbsp Butter
2 tbsp Heavy Whipping Cream
1/3 cup Swerve Brown Sugar Substitute
1/2 tsp Vanilla Extract
1/4 tsp Cinnamon
1 1/2 cups Chopped Pecans
Instructions
Combine the ingredients for the crust in a bowl.
Press the crust into a well-greased 9-inch springform pan, and chill In the freezer while you prepare the filling.
Combine the cream cheese, ⅓ cup sweetener vanilla extract and cinnamon for the filling in a mixing bowl, and blend until smooth.
Add in the heavy whipping cream, and beat until smooth and fluffy.
Spread the filling over the crust mixture. Chill for 4 hours in the fridge.
In a saucepan over medium heat, melt the butter.
Add in the brown sugar swerve and 2 tbsp heavy whipping cream. Bring to a low boil, and simmer until dark brown.
Remove from the heat, and stir in the vanilla, cinnamon and pecans.
Pour the topping over the cheesecake, and chill another 30 minutes before serving,

Mock Pasta

Ingredients
2 cups mozzarella cheese shredded
2 large egg yolks room temperature

Instructions
In a microwave safe bowl, melt your mozzarella cheese until melted. Let it cool for 2 minutes. Whisk in your egg yolks and form the mixture into a ball of dough.
Line a large baking tray with parchment paper and transfer the ball of dough onto it. Place another sheet of parchment paper on top and using a rolling pin, roll out the dough until thin. Refrigerate for 30 minutes.
Remove the dough from the refrigerator. Using a pizza slicer, cut thin strips of dough. Refrigerate overnight.
Bring a large pot of water to a boil. Once boiling, add the noodles and gently stir for 30 seconds. Remove from the heat and drain the water. Run under water before transferring to bowls and top with your favorite low carb pasta toppings.

Notes
TO STORE: Pasta can keep in their uncooked state for up to 1 week. Lightly cover it in plastic wrap to ensure it doesn't dry out.
TO FREEZE: Place chilled noodles in a ziplock bag and store them in the freezer for up to 1 month. Be sure to thaw it completely, before reslicing if needed.

Happy Easter!! Let’s talk condensed sweetened milk to make homemade coffee creamer!!!

Keto sweetened condensed milk •
• Pour one cup of heavy cream into a medium sized sauce pan. Add 1/2 cup butter and bring to a boil. Add a pinch of salt (optional). Continually stir and cook for 5 minutes. If using an electric stove, you may need to move pan on and off heat to regulate temperature so it doesn't boil over. �
• Whisk in 1/2 cup powdered Allulose sweetener and continue to stir and simmer for 10 minutes or until thick and coats the back of a spoon. �
• Remove from heat and stir in 1/2 teaspoon vanilla extract. This makes 1.25 cups. Allow to cool. It will thicken as it cools. If not using right away, store in a glass mason jar or bowl, covered, in the fridge. Reheat for 30 seconds in the microwave. It will separate when heated, simply whisk vigorously to combine and use in your recipe as needed. �
Want to make it into coffee creamer?

• Whisk in the 3/4 cup unsweetened almond milk and 1/2 cup heavy cream�
• Whisk in optional flavor options and cool for 10 minutes. Cover and refrigerate. �
• Storage; You can store each flavor you make in a small mason jar with a cover and refrigerate for up to a 2-3 weeks. You can also freeze this keto coffee creamer for up to 3 months
