A reminder about custom baked goods orders: I am currently accepting orders for items such as bread and cookies. The regular deadline for orders is Wednesday of each week, with baking taking place on Thursdays and Fridays. This week, I have adjusted my schedule, and baking will occur on Tuesday with pickup available on Wednesday in Polo. I will be out of the office Thursday and Friday for family medical reasons. To ensure availability, please send a direct message to reserve a spot on the order list, which has limited capacity.

This Saturday's Bread Bonanza! Come one, come all to the Polo Farmers Market. My Rye bread was so good, it sold before it cooled down!
I take orders, but don't snooze, Wednesdays are the cutoff days. Order your favorite bread and I'll have it ready by next Saturday.
I've got a slew of savory and sweet treats cooking up, thanks to Aggy, my trusty poolish sidekick, who's proving all my crazy ideas are genius.

I'm Karen, the heart behind Breathe Easy Homestead.

Like many of you, I find joy in simple things—fresh bread from the oven, a garden full of growing things, preserving the harvest, and gathering around the table with family. After years of dreaming, learning, and building, I've created a homestead business centered around old-fashioned skills, handcrafted foods, and the memories they create.

If you've been following my bread adventures, you've probably heard whispers about my trusty sidekick...

Meet Captain Aggy, the Poolish Pirate. 🏴‍☠️🍞

Aggy is the lively poolish starter behind many of my breads. She bubbles, ferments, and occasionally keeps me guessing. With a raised eyebrow and a mischievous smirk, she's become the unofficial captain of my bread kitchen and the guardian of every loaf that leaves my oven.

When you see Captain Aggy on a bread label, you'll know that loaf was crafted with patience, tradition, and a little pirate mischief.

From hearth breads and sweet treats to teas, balms, and homestead goods, my goal is simple: to create products that remind people of home, family, and the comfort of simpler days.

Every great loaf needs a secret ingredient.
Mine happens to be a pirate.
Aggy the Poolish Pirate is my bubbly overnight preferment that gives my breads their soft texture, rich flavor, and old-fashioned character.
After a successful maiden voyage in my Pullman pan, Aggy's newest creation is officially joining the fleet:
🍯 Honey Milk Homestead Bread
Made with honey, milk, simple ingredients, and a slow overnight fermentation.
Soft enough for toast. Perfect for sandwiches. Even approved by my Newfoundland taste tester, Ka'ida. 🐾

How's everyone surviving this gorgeous Saturday! Here I am at the Polo Farmers Market! My breads are mysteriously vanishing, but I've got some infused honey and my super popular Pine needle jelly left - yep, still my favorite too, made with love and a pinch of magic from the white pine trees on our homestead!
