Recipe of the Day:

Turkey Burgers

16 oz. all meat ground turkey breast
1/4 cup each (desired) diced celery, onion. green pepper
1 tsp. lite salt or Mrs. Dash & pepper to taste.
1 TBSP. Low Sodium Worchestershire Sauce
1 TBSP. Olive or Grapeseed Oil
5 oz. mozzarella cheese
1 slice tomato (optional)

Blend ingredients together and shape into patties. With oil in skillet, pan broil over medium heat. After 3-4 minutes, turn to brown the other side, top with tomato and cheese allowing to melt.

Recipe of the Day: Chicken Marsala
6 oz. skinned, deboned chicken breasts 2 crushed melba toasts
1 1/2 tsp. non-salted butter (margarine) 1/2 tsp. dried basil
1/2 cup low sodium chicken broth 1/2 tsp. freshly ground black pepper
1 cup sliced mushrooms

Place chicken breasts between two sheets of plastic wrap. Using a rolling pin or meat tenderizer mallet pound to 1/2" thickness. Spread crushed melba toast on plate, dip each piece of chicken in toast to lightly coat on both sides, shaking off excess. In nonstick skillet, over medium heat add butter and chicken, cooking 3-4 minutes until well browned. Remove chicken to serving platter and keep warm .
In skillet add broth, mushrooms, asil and pepper. Bring to a boil over medium/high heat. Cook 2-4 minutes, stirring frequently until liquid is reduced by half. our mixture over chicken to serve.
Serves 2

Recipe of the Day:
TACO SALAD
3/4 cup cooked pinto beans 3/4 cup lettuce
Low-sodium hot sauce to taste 1 TBSP. Sour Cream Copycat
1/4 tsp cumin (Opt. Cooked Chicken or Beef)
3/4 cup total of combined chopped onion tomato & green pepper.
Spread beans on plate, top with hot sauce, vegetables and sour cream copy cat.

SOUR CREAM COPYCAT
1 cup non fat yogurt 1 TBSP. lemon juice
1/8 tsp. onion powder
Combine. (Equals 12 TBSP.)
