The meat muffins came out great as hamburgers! Next time I will put the glaze on them.

Smoky Bacon BBQ Meat Muffins
(Keto / Low-Carb)

Servings: 9 muffins
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Ingredients:

For the meat muffins:
1 lb (450g) ground beef (i used 80/20 )
1 egg
2 tbsp heavy cream
1/2 cup crushed pork rinds (or almond flour for texture)
1/2 tsp liquid smoke (optional, but adds a grilled vibe)
1 tbsp yellow mustard
1 tbsp sugar-free ketchup
1 tbsp golden erythritol (like Swerve brown or Lakanto)
1/2 tsp Worcestershire sauce
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp smoked paprika
Salt & pepper to taste
4-5 slices bacon, halved (to wrap or top each muffin)

For the sweet BBQ glaze:

3 tbsp sugar-free ketchup
1 tsp yellow mustard
1 tsp Worcestershire sauce
1 tbsp golden erythritol
Optional: a pinch of cayenne or hot sauce

Instructions:

1. Preheat oven to 350°F (175°C). Lightly grease a silicone or nonstick muffin tray.

2. Mix the meat base: In a large bowl, combine ground beef, egg, cream, pork rinds, mustard, ketchup, sweetener, Worcestershire, and all seasonings. Mix until well combined but don’t overmix.

3. Form the muffins: Using a large ice cream scoop or spoon, press meat mixture into each muffin cup. Wrap a half-slice of bacon around the edge or crumble on top for rustic texture.

4. Glaze time: Mix all glaze ingredients in a small bowl. Brush or spoon over each muffin.

5. Bake: Cook for 20 minutes, then increase oven to 450°F (230°C) for 5 more minutes to crisp the bacon and glaze.

6. Rest & serve: Let cool for 5 minutes before removing. Garnish with chopped parsley, and serve hot!

KETO SAUSAGE GRAVY

Ingredients:
1 lb breakfast sausage
1 cup chicken stock or broth
1 cup heavy whipping cream
2 oz cream cheese, cubed
1/2 tsp xantham gum
Salt and black pepper to taste!

Directions:
Brown sausage in a skillet and drain off most of the grease.
Sprinkle xantham gum over cooked sausage and mix.
Add chicken stock/broth, HWC, and cream cheese. Mix and simmer to desired thickness.

Serve with your favorite keto friendly bread, muffins, etc, or over scrambled eggs (or even over more sausage!).

Keto Sheet Pan Chicken and Loaded Cauliflower

Ingredients:
4 skin-on, bone-in chicken thighs (about 5 ounces each)

2 tablespoons olive oil

4 sprigs thyme

Kosher salt and freshly ground black pepper

1/4 teaspoon paprika

1 small head cauliflower (about 1 pound)

4 tablespoons unsalted butter, melted and cooled

2 slices no sugar, uncured bacon

4 slices sharp Cheddar

1/4 cup sour cream

2 teaspoons finely chopped chives

Directions:
Preheat the oven to 450 degrees F. Line a rimmed baking sheet with parchment paper.

Place the chicken thighs, olive oil, thyme, 1/2 teaspoon salt, 1/4 teaspoon freshly ground black pepper and paprika in a medium bowl and toss to coat evenly. Set aside to marinate for 30 minutes.

If necessary, remove the outer leaves from the head of cauliflower, then cut it into quarters, leaving the inner stem intact so that the florets do not separate.

Put the chicken thighs skin-side up on one side of the baking sheet, spacing them evenly. Drizzle any leftover marinade over the chicken. Put the cauliflower on the other side of the baking sheet, with one cut-side down.

Brush each cauliflower piece with melted butter and sprinkle evenly with 1/2 teaspoon salt.

Put the bacon on the edge of the baking sheet and bake until browned and crisp, 15 to 17 minutes. Remove the bacon to a paper towel-lined plate. Return the baking sheet to the oven until the chicken is cooked through and an instant-read thermometer registers 165 degrees F when inserted into the thickest part not touching the bone, 25 to 30 minutes more. The cauliflower should be lightly browned and cooked through.
When the bacon is cool enough to handle, roughly chop it.

Before removing the baking sheet from the oven, carefully lay a slice of Cheddar on each cauliflower piece and return to the oven until melted, about 1 minute.

For serving, top each cauliflower with 1 tablespoon sour cream and a sprinkle of the bacon and chives.

Nobody has it all together.

Not the person whose house is always clean.
Not the person who always eats perfectly.
Not the person who never misses a workout.
Not the person who seems to have everything figured out.

Sometimes we’re doing great.
Sometimes we’re just getting through the day.
And sometimes… we’re doing both at the same time. 💜

Social media can make it look like everyone else has this whole life thing figured out. BUT behind the pictures, the smiles, the accomplishments and the “perfect” moments, we’re all human.

So give yourself some grace.

You can be working on yourself and still have hard days.
You can be proud of your progress and still have things you want to change.
You can be strong and need a break.

You don’t have to have it all together to be moving forward. 💜
