Holiday Cherry Vanilla Cake Recipe:

A festive vanilla cake topped with creamy frosting and a rich cherry compote — Perfect for Christmas, cozy nights, and holiday parties!

🍰 Cake Ingredients
Vanilla Cake Layers
2 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter (room temp)
1 ¾ cups sugar
4 large eggs (room temp)
1 tbsp vanilla extract
1 cup whole milk
Cream Cheese Frosting
8 oz cream cheese (softened)
½ cup unsalted butter (softened)
3 cups powdered sugar
1 tsp vanilla extract
Pinch of salt
Cherry Topping
2 cups fresh or frozen cherries (pitted & halved)
½ cup sugar
¼ cup water
1 tsp lime juice (optional — enhances the cherry flavor)

Instructions:

1. Make the Cherry Topping
Add cherries, sugar, and water to a saucepan.
Simmer on medium heat for 10–12 minutes, until cherries soften and the syrup thickens.
Stir in lemon juice.
Let cool completely — the topping should be glossy and spoonable.
2. Bake the Cake
Preheat oven to 350°F (175°C).
Grease and line two 8-inch round cake pans.
Combine flour, baking powder, and salt in a bowl.
In another bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, then vanilla.
Alternate adding dry mixture and milk.
Divide into pans and bake 25–30 minutes, or until a toothpick comes out clean.
Cool fully.
3. Make the Frosting
Beat cream cheese and butter until smooth.
Add powdered sugar slowly.
Mix in vanilla and salt.
Frost cooled cake layers.
4. Assemble
Frost the cake smoothly on all sides.
Add the cooled cherry topping to the center.
Chill for at least 20 minutes for clean slices.

Zucchini Lasagna

Light, fresh, and layered with love — this zucchini lasagna is proof that comfort food can still feel good. Perfect for meal prep or a cozy night in.

1. 2–3 medium zucchinis, thinly sliced lengthwise
2. 1 lb lean ground turkey or beef (or plant-based substitute) if desired
3. 1 cup low-fat ricotta or cottage cheese
4. 1 large egg (for the ricotta mix)
5. 1 ½ cups shredded mozzarella cheese
6. ½ cup grated Parmesan cheese
7. 2 cups marinara sauce (low-sodium or homemade)
8. 2 cloves garlic, minced
9. 1 tsp olive oil
10. 1 tsp Italian seasoning
11. Salt & pepper to taste

Optional: fresh basil for garnish

Instructions
1. Prep the zucchini: Slice lengthwise and lay on paper towels. Sprinkle lightly with salt and let sit 10–15 minutes to draw out moisture. Pat dry.

2. Cook the filling: In a skillet, heat olive oil. Add garlic and sauté 1 minute, then add ground turkey. Season with salt, pepper, and Italian seasoning. Cook until browned. Stir in 1 cup of marinara and simmer 3–5 minutes.

3. Mix the ricotta layer: In a small bowl, combine ricotta, egg, Parmesan, and a pinch of salt and pepper.

4. Assemble the lasagna: Spread a thin layer of marinara sauce in a baking dish. Add a layer of zucchini slices, then meat sauce, ricotta mixture, and a sprinkle of mozzarella. Repeat until all ingredients are used.

5. Bake: Cover with foil and bake at 375°F (190°C) for 25–30 minutes. Uncover and bake an additional 10 minutes until bubbly and golden.

6. Rest & serve: Let the lasagna cool for 10 minutes before slicing. Garnish with fresh basil and enjoy!
