This is a Nepali-inspired dish known for its smoky heat, tangy curd base, and garlic punch, simple ingredients but BIG flavour 🤌

🔸 Ingredients 👇
• Boneless chicken – 500 g
• Ginger garlic paste – 1 tbsp
• Red chilli powder – 1 tsp
• Turmeric powder – ½ tsp
• Coriander powder – 1 tsp
• Cumin powder – ½ tsp
• Salt – 1 tsp. or as needed
• Oil – 1–2 tbsp (for shallow frying)
* Onion – 1 medium sliced
* Green chillies – 3 deseed and dice
For Yogurt Tempering:
• Yogurt – 1 cup
• Garlic (finely chopped/crushed) – 1 tsp
• Red chilli powder – ½ tsp
• Turmeric – ¼ tsp
• Kasuri methi – ½ tsp
• Salt – a pinch

🔸 Quick Steps 👇
• Marinate chicken with spices & ginger garlic paste
• Shallow fry till golden & cooked through
Add onions and green chillies on top
• Add 2 tbsp. mustard oil for tempering (i used regular oil), add garlic and chilli and fry till golden and then add your spices
• Mixture tempering with yogurt and form a mixture
• Toss over chicken and enjoy!

Serve hot with roti, naan, or just eat it straight from the pan… no judgment 😮‍🔥

‼️Save this recipe because once you make your own chilli oil, there’s no going back 🌶️🔥

If you’re making my no-steamer dumplings (scroll down), this is the only sauce you need:

🔸 Ingredients 👇

• 1 cup oil
• 1 cinnamon stick
• 1 star anise
• 2 small onions (roughly sliced)
• 4–6 garlic cloves
• 2½ tbsp chilli flakes (crushed)
• Scallions (optional but SO good)
• 1 tsp soy sauce
• Salt to taste (I added ~1 tsp)

🔸 Step 1: In 1 cup oil, add cinnamon stick, anise, onions and garlic. Let everything cook gently until the onions & garlic turn golden brown and fragrant. Low to medium heat. Once golden, strain the oil.

🔸 Step 2: In a heat-safe bowl, add:
• 2½ tbsp crushed chilli flakes
• Some freshly chopped garlic

Now carefully pour the HOT strained oil over it and add 1 tsp soy sauce, salt to taste and fresh scallions on top.

Drizzle it over dumplings, eggs, noodles, rice, even parathas. No rules

When it comes to cooking, I always seek recipes that are simple with minimum ingredients and less time consuming — it’s more practical and easy to add to my weekly menu.

Try this shinwari karahi with only two main ingredients. It takes less than 30 minutes and comes out finger licking good!

You just need chicken and tomatoes (you can increase the quantity if you like a more runny texture), add ground black pepper, salt and simmer till oil separates - and VIOLA! You’ve got a show stopper! 🔥
