Super easy 4 ingredient ice cream cake that HITS the spot!

1 loaf store bought pound cake
Ice cream of choice - I used Kesar Pista Kulfi
Whipped cream
Chopped pistachios

Slice the pound cake lengthwise.
Layer with the ice cream ending with a layer of cake.
Wrap tight and freeze.

Thaw for about 20-30 minutes before serving. Just before serving, cover with whipped cream and top with chopped pistachios. Slice and serve. Perfect for summer gatherings! So good!

Tuscan Salmon
Make a super easy gorgeous sauce with cherry tomatoes, garlic, red chili flakes and oregano. If you prefer a smoother sauce, blend it to desired texture. Now add in baby spinach, cooked cannellini beans, some cream (I used a bit of goat cheese) and simmer for a few minutes. Add some parmegiano reggiano to finish.
Top with beautifully roasted spiced salmon (425F, 7 min) for a high end everyday dinner!

Pro tip: if you have some pre-cooked cannellini beans in the freezer this meal comes together in a snap (and you control the sodium too!)

A fun experience at the acclaimed .newyork eating and drinking foods inspired by Kerala’s toddy shops. As you would expect, there were a lot of fun twists on traditional Kerala home cooking.
Of special note were the cocktails- the Malayali Old Fashioned, the Sam Bar and God’s own country. So good and creatively presented too!
I loved the inji puli amuse bouche, and the mango pachadi-esque palate cleaner. We had a a couple of appetizers from the Touchings menu and a couple of curries from the mains. The Idiyappam was perfect and the mini hoppers super cute (made with love per Chef!)
And of course - finishing with Inji Puli Ice cream (who would have thought of that combo??!)

Special shoutout to Daya whose guidance navigating the menus and prompt and personal attention truly enhanced our dining experience- especially when he brought out the Chef to meet us!

has done a wonderful job with the menu, the ambiance and the nostalgic pull from the flavors, while serving everything up in a modern sophisticated way that’s so New York.
All the senses were definitely engaged with this meal!

Sprinkle Everything but the Salt seasoning blend
Top with 2 boiled eggs
Garnish with 5 almonds (toasted, unsalted)

Tofu and Veggies Stir Fry
Its been over a month since we had rice - whole another story involving winter overeating, guilt and prep for an upcoming mountain climb…
Anyway, so in keeping with our protein plus veggie forward diet, I made this awesome stir fry. So delish by itself but also with a bit of Jasmine rice. Yum!

Onions, garlic, cashews, bell peppers, zucchini, eggplant, tofu.
For the sauce: sesame oil, rice vinegar, coconut aminos (& a bit of low sodium soy), water, minced garlic, ginger, honey, red chili flakes, corn starch

A French Lentil Salad with Roasted Cabbage

First time making this delightful dinner salad chock full of flavor with lots of vegetables too.

Toss together cooked lentils with chopped red onion, red bell pepper, cucumber, cherry tomates, and Kalamata olives
Dressing: olive oil, lemon juice, salt, pepper, 1 crushed garlic clove and grainy mustard
Top with goat cheese

Optional- Add a roasted cabbage wedge
So good!

Pro tip: Lemon juice adds a tangy zip to the salad reducing the need for much salt. That’s a win!

Spicy Black Bean Soup

This tastes like a dream! Simple to make and so very nutritious too!

Sauté onions, garlic, green bell peppers and carrots
Add cooked black beans, water or low sodium broth
Add a generous amount of ground cumin, chipotle pepper, chili flakes.
Simmer covered for about 30 min.
Blend to a thick grainy consistency using a hand blender. Salt to taste.
Serve topped with sour cream, cilantro and diced avocado. If you go really low on the salt you can squeeze some fresh lemon over your bowl to perk it up!

Kathi Rolls at home! When you get that craving and its too cold to go out, we improvise!

All I did was marinate the chicken tenderloins with lots of fresh ginger and spices in Greek yogurt and cook the bite sized pieces for 10 min in the oven. The rest is just assembly.
Lachha Paratha (.official Frozen pack from )
Coriander chutney ( )
Cooked chicken pieces
Top with crunchy freshly pickled red onions

Roll it up, wrap in wax paper and enjoy! Waaay better than takeout!

Choripán in La Boca, Buenos Aires! So absolutely delicious!

Freshly grilled chorizo on bread with chimichurri and salsa criolla. So simple and so good! These grills are everywhere with people standing in lines waiting for the quintessential street food. Yum!!
