This high protein, low carb, low calorie meal was so simple and easy to make and extremely delicious.
We have about 7 ounces of marinated skirt steak, one small potato diced, red pepper, and red onion, and white button mushrooms with egg whites and a sprinkle of feta cheese.
This meal was divided into two for breakfast and lunch. When leftovers look like this, then I don’t have a problem lol.

Late night workout 💪🏻
It’s the first day of a new month, and I wanted to challenge myself to do a workout every day. Doesn’t have to be long and intense, as long as I do something to move my body. And all day I’ve been meaning to do something but wasn’t able to. So I didn’t want to end the day without getting something in.
So I did a quick thirty minutes of back, legs and abs. A nice little burn before bed.

So, today at the supermarket I saw these beautiful mushrooms and started to think what I could make with them. I know I wanted a somewhat creamy sauce with onions and cherry tomatoes. I grabbed them with a pack of chicken thighs and headed home.
In the kitchen, I grabbed some things to make this saucy chicken dish. Butter, red wine, veggie broth and sour cream (because I didn’t have heavy cream).
First, I sautéed the chicken on high heat to get a nice crust on it. After, I caramelized the onions, mushrooms and garlic. Scrape the bottom of the pan with the veggies to get it coated in all those flavored goodness. When they softened up, I poured red wine and simmered it to a reduction. Next, came the broth. I bring it to a boil to continue cooking the chicken and let the sauce thicken up a bit. Lastly, the tomatoes go in along with the sour cream. Simmer it on low until it becomes a creamy brown consistent.
And oh my gosh this was incredibly delicious. To anyone who knows me, they know the sauce is everything for me. On top of a bed of steamed broccoli, this meal was amazing. And I’m not just saying that because I was starving as this was my first meal of the day at 4pm. This is definitely one for the books.

Woke up today before the kiddos to get a workout in. I must admit I’ve been out of the loop for about three weeks. But here we go again.
I’m always faced with the dilemma of what time is best for me to do my exercise. After 3pm, my day is more full with cleaning, cooking, cleaning again and getting the boys ready for bed. So by that time if I have not gotten it in, then I most likely won’t do it for the day.
Then, in the middle of the day when I do have my most energy, I’m busy schooling the kids and preparing lunch
In the mornings, honestly I’m just waking up and don’t have much energy or time. Because I have to start the boys’ day
So I am kind of forced to find the energy early before they wake up to get a workout in. And that’s kind of why I haven’t done anything in a few weeks. Finding time can be difficult. But today I achieved my goal! I miraculously had some energy, but moratuwa determination, to finally get something in. And it feels great! It just completes your day (before it even starts) when you do something for yourself that makes you feel great. Now, I need to tell myself that everyday 😉 👍

You’re going to miss this someday, I whispered to myself as I am shot in the butt with a Nerf gun while unclogging the toilet.
🤦🏻‍♀️
This literally just happened to me the other day. These boys eat huge amounts of foods therefore taking massive number twos and using large amounts of toilet paper and sometimes forgetting to flush the toilet and clogging it up lol I know TMI. Meanwhile, they’re running around, screaming, shooting bullets everywhere and all@I can do is sigh and let them be. This is what life with boys is about. And as much as it can and does frustrate me, I love it and I will definitely miss it when it all stops.
