Some dishes don’t make it to the menu forever — but they live rent free in your memory 💫

This Basque Cheesecake was one of them. Shot this almost two years ago watching work through it from scratch, and I still think about it.

Burnt top. Creamy center. Baked hot and fast so the edges set while the inside stays molten-soft. Then finished with a berry lavender jam and sage whipped cream that took the whole thing somewhere unexpected.

It’s no longer on the menu but still has some amazing desserts 🤍
