Dr. Oz's Green Drink

Ingredients
2 cups spinach
1/2 cucumber
1/4 head celery
1/2 bunch parsley
1 bunch mint
3 carrots
2 apples
1/4 orange
1/4 lime
1/4 lemon
1/4 pineapple
Preparation

Combine all ingredients in a blender. Feel free to add water to get desired consistency. Serve and enjoy!

Spinach & Artichoke Bread Roll Tree

Ingredients:
========
1 cup Frozen spinach, thawed
1 cup Frozen artichoke hearts, thawed
1 lb Mozzarella, grated
1 1/2 cups Ricotta Cheese
1/4 cup Parmesan
to taste Salt & Pepper
1 lb Store-bought pizza dough
2 tbsp Flour for dusting
2 tbsp Butter, melted
1 Garlic clove, minced
2 tbsp Chopped Parsley
1 tsp Red pepper flakes

Direction:

Preheat the oven to 350 degrees F.

Remove any excess liquid from the spinach and artichokes and place in a large mixing bowl. Add in the cheeses and season with salt and pepper then stir to combine and set aside.

Dust a work surface or large cutting board with flour and roll out pizza dough into a thin sheet. using a pizza wheel, cut the dough into 12 pieces.

Fill each square of the pizza dough with about 2 tablespoons of the spinach mixture and bring the corners together and place each ball seam-side down on the cutting board. Roll each ball to smooth out and place onto a baking sheet in the shape of a Christmas tree with 10 balls for the tree and 2 for the trunk.

Place into the oven and bake for 18-20 minutes.

In a small bowl, combine the butter, garlic, parsley, and the red pepper flakes. Season with a little salt and brush over the top of the “tree” once it comes out of the oven. Serve hot.

Daphne Oz's German Chocolate Cake

Dr. Oz shares the guilty pleasure he can't do without: a decadent birthday cake from his daughter Daphne.

Ingredients:

1 box Duncan Hines Moist Deluxe Devil's Food cake mix
1 box instant chocolate pudding
1 cup (extra) of water
2 tsp vanilla extract
1/2 tsp iodized salt
6 egg yolks
14 oz sweetened shredded coconut
8 oz pecans, chopped

Directions:
----------------
For the cake: Whisk both mixes and combine with eggs, oil/butter and water as directed on cake packaging, plus 1 extra cup of water. Beat with hand mixer until smooth, 2 to 3 minutes.

Pour into 2 oiled cake pans and bake as directed. These cakes will always be extra moist because of the pudding addition and will keep cooking in the hot pan after removed from the oven, so remove from the oven when a toothpick at the center comes out only slightly moist and with little bits of chocolate cake stuck to it. Allow to cool in pan before removing to cooling rack or plate.

For the icing: Combine all ingredients except coconut and pecans over a double boiler, whisking constantly to keep eggs from cooking. Cook until thickened, 15 to 20 minutes.

Stir in coconut and pecans. Allow to cool and set 20 minutes, stirring occasionally. Spread on cooled cakes while icing is still slightly warm to allow it to melt onto cake and drip down the sides. Leave it in the fridge to set until ready to serve ... or devour immediately.

Fish and chips doesn't have to be a greasy calorie bomb of a meal. What's the secret? Baking, not frying the whitefish fillet will keep this beloved British dish just under 500 calories. Pair it with a Greek-yogurt based tartar sauce and chips made from turnips!

Ingredients:
------------------
1 1/2 lbs whitefish fillets (cod)
3 egg whites, at room temperature
1/4 cup tapioca flour (same as tapioca starch)

Directions:
-----------------

1. Pat fish to dry and set aside.

2. Use a hand mixer to beat egg whites until stiff. Fold in salt, tapioca flour, and almond flour to completely combine (you will lose a little of the air you beat into the egg whites, but that's okay).

3. Dredge fish fillets first in sunflower oil and tapioca flour. Dip in batter and use your fingers to spread the batter out over the fish. Don't worry if fish fillets aren't completely evenly coated. They should end up being 1/4" thick or slightly less before you bake them.

4. Bake fillets at 375°F for 20 minutes.

This quick recipe can easily be made in the morning, but it also freezes well, so consider doubling the batch and freezing an extra casserole to serve later. Plus, while this recipe calls for zucchini and squash, you can easily substitute in whatever vegetables you have on hand.

Ingredients:

1 cup butternut squash, diced
1 medium zucchini, diced
2 tbsp olive oil
1/2 tsp sea salt
1/4 tsp black pepper
1 large avocado, sliced
8 eggs
1/4 cup almond milk

Directions:
-----------------
1. Preheat the oven to 375°F.

2. Use organic butter or spray on a 9x13 baking dish or a 12 muffin tin.

3. In a large pan sauté zucchini and butternut square in olive oil, about 5 minutes.

4. When veggies are slightly mushy, place them in the bottom of the pan or muffin tin. Layer in the chopped avocado, then top with more veggies.

5. Whisk the eggs, almond milk, and salt and pepper mix together and pour it over top of everything.

6. Bake for 40-45 minutes, or until the egg is barely set in the center. Enjoy!
