My name is Nicole, and I am a certified health and wellness coach in Northern Virginia. I'm also a wife, mom, animal lover and breast cancer survivor. Wellness Feast was founded to help others reclaim their health, lives and joy. I'm in my 50s, and I can honestly say I've never been healthier or happier. Whatever age you are, I want you to be able to say the same thing.

If you only have a few minutes for breakfast, I invite you to skip the ultraprocessed, flavored instant oatmeal packet. Rolled oats are ready in five minutes ~ for extra protein I cook these in half unsweetened soy milk, half water (which sweetens up when heated). Today I added chopped apples and walnuts, a dash of cinnamon and a couple drops of vanilla extract. Turn off the heat before you add your flaxseed meal and chia, and just the tiniest drizzle of maple syrup goes a long way. Topped with more walnuts for good measure.

You’re getting a little flurry of my meal activity, because I’m trying to show you that nine times out of ten, you can make it at home as fast as you can order it, and it’s going to be healthier and yummier. Not to mention significantly cheaper. This is a big shortcut of mine, especially for lunch: a frozen meal, “healthed up.” shrimp green curry ~ I cooked it on the stove top and threw in leftover grilled shrimp from last night, the end of a bag of spinach, and a big bok choy leaf that was languishing in my produce box.

A favorite use of leftover tyrokafteri (a dip made from feta, red pepper and jalapeño) from . If you haven’t had it, RUN ~ don’t walk ~ to Plaka Grill and get some. Grilled sourdough spread with the dip and topped with sliced tomatoes, basil, dill, sunflower seeds and sliced avocado.

I dreamt about my mom last night. It’s funny, I used to not be able to dream about people who had passed. But that changed when I lost my parents. In any case, obviously I need to spend the morning doing something Gloria would love. Wishing a happy Mother’s Day weekend to ALL of you ~ I know Mother’s Day can be hard for lots of people for lots of reasons. Aren’t we all mothers to someone? I certainly have a lot of mothers out there ~ some of them are even younger than me! Also forgive all the dog hair. 🙄 I paint in the room that has my boys’ old childhood furniture, because it makes me happy. And of course the dogs follow me there. ❤️

Reminder: I am hosting another monthly health and coaching event THURSDAY at 11:30 at Church of the Holy Comforter in Vienna. You do not have to be a church member (or even a church kind of person) to attend ~ it’s open to all!

Join me for a short presentation on Spiritual Health & Centering Practices for Summer (From Good Intentions to Mindful Habit). I’ll leave plenty of time for questions and discussion.

Together we’ll explore simple yet powerful practices such as silence, creativity, meditation & prayer, play, , meaningful community and more ~ and how these can be woven into your everyday life in a way that feels grounding, not forced or overwhelming.

Whether you’re looking to deepen your faith, create more space for peace or simply reset your rhythms, this session will offer both inspiration and practical guidance to carry with you through the summer and into the demands of the seasons that follow.

Surely I’ve posted this tomato sandwich before? On a girls’ trip a couple years ago, my friend KT turned us onto it. It’s ’s recipe and I think about it constantly, but I have to wait for decent tomatoes. So this is breakfast today, because I’ve been waiting roughly six months for this sandwich. 😂
