๐๐ Garlic and Herb Roasted Chicken with Sweet Potato Wedges ๐๐
A classic comfort dish made healthy! This garlic and herb roasted chicken paired with crispy sweet potato wedges is easy to prepare, full of flavor, and perfect for any meal.
Ingredients:
For the Chicken:
4 bone-in, skin-on chicken thighs or drumsticks ๐
3 garlic cloves, minced ๐ง
2 tbsp olive oil ๐ซ
1 tsp dried rosemary ๐ฟ
1 tsp dried thyme ๐ฑ
1/2 tsp paprika ๐ถ
Salt and pepper, to taste ๐ง
For the Sweet Potato Wedges:
2 large sweet potatoes, cut into wedges ๐
1 tbsp olive oil ๐ซ
1 tsp garlic powder ๐ง
1/2 tsp smoked paprika ๐ถ
Salt and pepper, to taste ๐ง
Instructions:
Preheat Oven: Preheat your oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
Season the Chicken: In a small bowl, mix olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper. Rub this mixture generously over the chicken pieces.
Prepare the Sweet Potatoes: In another bowl, toss the sweet potato wedges with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them on one side of the prepared baking sheet.
Bake: Place the seasoned chicken pieces on the other side of the baking sheet. Bake for 35โ40 minutes, flipping the sweet potato wedges halfway through. Ensure the chicken reaches an internal temperature of 165ยฐF (74ยฐC).
Optional Broil: For extra crispy skin and wedges, broil for the last 2โ3 minutes.
Serve: Garnish the chicken and sweet potatoes with fresh herbs (optional) and serve hot.
