HERBY TAHINI PROTEIN BOWL ~ 15 minute lunch!!

You need:
quinoa
sweet potatoes
sauteed tempeh or protein of choice
cherry tomatoes

herby green tahini dressing:
1 tbsp olive oil
1 tbsp tahini
1 tbsp water
2 tbsp red wine vinegar
1/2 cup parsley
1 tsp Dijon mustard
Salt, pepper, garlic powder

ONE PAN PESTO MEDITERRANEAN GNOCCHI (blue-zones inspired!) 🫒🍅🫶🏼

16 oz gnocchi (boil for 1 minute to soften)
2 red bell peppers, diced
1 red onion, chopped,
2 cans chickpeas, rinsed and drained
1 pint cherry tomatoes
2 tbsp Italian or mediterranean seasoning
1/3 cup kalamata olives, pitted
1/3 cup green greek olives, pitted
2 tbsp olive oil
2 tbsp olive brine
Pinch of salt and pepper

Optional: add pesto when it comes out of the oven (or before, but I think the pesto stays fresher when you add it after) as little or as much as you like

1. Preheat oven to 450 F.
2. Boil gnocchi, cook for 1-2 minutes to soften.
3. Combine all ingredients in a casserole dish like 9x13.
4. Stir together and bake for 20 minutes stirring halfway.
5. Mix in the pesto if ya want!
6. Serve and enjoy :)

save these PEANUT NOODLES 🍜🥜🫛

I can’t believe my friends baby is 8 months old now!! It feels like just yesterday I brought this meal to her. We will get together for dinner and each bring half the meal to get our lives as mothers a little bit easier. Be the village!!! If you have a friend who has kids, a baby, just gave birth or is struggling even with older kids, bringing parents a meal is the nicest gesture.

The recipe:
1. Chop and prep veggies. I use bell peppers, snap peas, purple cabbage, green onions, and cilantro. Feel free to add in edamame, tofu, mushrooms, zucchini, carrots, etc.
2. boil noodles (I used about 12 oz) any kind ya like! And saute the veg at the same time.
3. Make the peanut sauce.
4. When the noodles are done, strain then add into the veggies and then add in the sauce and stir until combined on low heat then serve with cilantro and sesame seeds!

Peanut dressing: (just whisk together)
- 1/4 cup rice vinegar
- 1/3 cup peanut butter
- 3 tbsp soy sauce or coconut aminos
- 1 tbsp sriracha
- 1 tbsp mirin
- 1 tbsp toasted sesame oil
- Garlic + ginger

Gut healthy vinaigrette:
1/3 cup olive oil

3 tbsp apple cider vinegar
Juice of 1 lemon
1 tbsp dijon mustard
1 tbsp maple syrup
1 tsp salt
1/2 tsp black pepper
1 tsp garlic

Salad ingredients:
2 cups purple cabbage, shredded
2 cups green cabbage, finely shredded
1 cup thinly sliced fresh fennel (I couldn’t find it in the store the other day but usually I have this in there!!)
1 cup shredded or sliced beets
1 cup shredded carrots
1 head finely chopped parsley

*use a mandolin to shred, a sharp knife, a veg peeler, or a food processor shredding attachment

Whisk dressing together then add to the veggies!

Home sweet home 🍅🌿🏡 Comment “cookbook” and I’ll send you the link to my salad cookbook so you can eat like this everyday. Everytime we eat out lately or order take-out it’s SO expensive, low quality, made with ingredients I wouldn’t use at home and underwhelming. It’s also much harder as toddler parents to go out to eat so I try to make eating at home easy, low effort, healthy but sooo delish.

CRISPY PROTEIN-STYLE TOFU SANDWICH 🍔🥬🥤

Ingredients:
1 head iceberg lettuce
Tomato slices
Red onion
1/2 block tofu
Batter: 3 tbsp whole wheat flour + 1/2 cup soy milk (whisked)
Breadcrumbs (I used sourdough breadcrumbs)

🔥Spicy girl aioli
1 tbsp avocodo oil mayo
1 tbsp almond cream cheese optional
Sq**rt of Dijon mustard
Sq**rt of buffalo sauce (I use primalkitchenfoods )
Juice of 1/2 lemon
Salt pepper garlic to taste

How to:
1. Preheat air fryer to 400 F.
2. Cut tofu block in half - the long way.
3. Dip tofu in batter then breadcrumbs then lay on sheet with parchment.
4. Spray with olive oil and bake for 15 min or until crispy and golden brown.
5. While it cooks cut ends of iceberg head off to use as the bun and prep tomato and onion slices.
6. Assemble the crispy sandwich w the aioli and enjoy!!!
