save these PEANUT NOODLES 🍜🥜🫛
I can’t believe my friends baby is 8 months old now!! It feels like just yesterday I brought this meal to her. We will get together for dinner and each bring half the meal to get our lives as mothers a little bit easier. Be the village!!! If you have a friend who has kids, a baby, just gave birth or is struggling even with older kids, bringing parents a meal is the nicest gesture.
The recipe:
1. Chop and prep veggies. I use bell peppers, snap peas, purple cabbage, green onions, and cilantro. Feel free to add in edamame, tofu, mushrooms, zucchini, carrots, etc.
2. boil noodles (I used about 12 oz) any kind ya like! And saute the veg at the same time.
3. Make the peanut sauce.
4. When the noodles are done, strain then add into the veggies and then add in the sauce and stir until combined on low heat then serve with cilantro and sesame seeds!
Peanut dressing: (just whisk together)
- 1/4 cup rice vinegar
- 1/3 cup peanut butter
- 3 tbsp soy sauce or coconut aminos
- 1 tbsp sriracha
- 1 tbsp mirin
- 1 tbsp toasted sesame oil
- Garlic + ginger
