Basically a Japanese summer in a bowl! Cold soumen noodles with mozuku + mentsuyu broth, topped with shrimp, tomatoes, cucumber, natto, umeboshi, myouga, and sesame. salty, tangy, slippery, nutty, chewy… all the textures, all the umami 🫶 🌿 Summer Soumen with Mozuku Broth (1 serving) Base Broth: - Mentsuyu – 1/4 cup (60 mL), diluted with 1/4 cup (60 mL) cold water or dashi - Mozuku (vinegared) – 1/4 cup (60 mL), including some of its liquid - Umeboshi – 1, mashed or finely chopped, stirred into the broth - Myouga (Japanese ginger) – 1/2 bulb, thinly sliced and added to the broth - Toasted sesame seeds – 1/2 tsp, stirred into broth or sprinkled on top Noodles & Toppings: - Soumen noodles – 1 bundle (about 50g dry) - Cooked shrimp – 3–4 pieces - Natto – 1/2 pack (about 25g) - Cherry tomatoes – 1/4 cup, halved - Cucumber – 1/4 small cucumber, julienned - Ice cubes – optional, to chill noodles Optional Garnishes: Shiso leaf – thinly sliced Grated ginger – for extra zing Extra sesame seeds or myouga on top
