Memorial Day weekend is comin’ in hot and so is this 90 degree day! Which, where I come from, means SUMMER IS HERE!!

Whenever the weather gets hot like this I tend to eat a lot lighter... aka fruit bowls, crackers & carrots with hummus, and lots of coconut water. This bowl is nice and refreshing to get you going but not big you down. Banana, mango, strawberry, pineapple, and coconut water.

Veggie chili with a plant based cheese sauce. This chili was soo yummy especially the leftovers! I’ve always wanted to try and make a vegan cheese sauce and this one did not disappoint!

🧀2 cups peeled and chopped potato
🧀1 cup chopped carrots
🧀1/2 cup chopped yellow onion
🧀3 garlic chopped
🧀EVOO
🧀1/2 cup raw cashew
🧀1/2 cup nutritional yeast
🧀1 tsp paprika
🧀1 tsp sea salt, plus more to taste
🧀Fresh cracked pepper
🧀Hot sauce (optional)
In a large pot heat olive oil and cook potato, onion, carrot, and garlic for about 10 minutes. Once veggies start to break down cover with 2 cups hot water and simmer until soft, about 20 minutes. Add remaining ingredients minus the hot sauce to a blender or food processor and blend until smooth, adding more water if needed for consistency. Add salt, pepper, hot sauce to taste.
Enjoy on chili, nachos, tacos or whatever your heart desires!

For years, I have struggled with headaches and chronic fatigue and for as long as I remember I’ve always dealt with stomachaches and nausea. For a while I chalked it up to an unhealthy lifestyle, it wasn’t until I really began to live a healthful life that these symptoms became glaring. I had many doctors basically tell me that there was nothing wrong with me which only made life all that more stressful.

I began to remove things out of my home (air fresheners, certain cleaners, and other fragrances) that seemed to be helping my headaches but I still wasn’t able to get out of bed in the morning.

Then about a year ago the rashes began, small bumps at first but soon progressed to full blisters covering my hands. I was hardly able to drive let alone work or even wash my hair. After some searching I found a doctor that uses holistic principles. She suggested an elimination diet (at this point I knew it had to be linked to my diet) and some blood work. We found that some of my thyroid levels were low (and have been consistently on the lower end for years but most doctors don’t treat thyroid levels at this level because it is just slightly off) and she decided to have me treated.

All of this to say that I have since began a gluten-free/ plant based diet and my health has improved tremendously. I can get out of bed in the morning, I can eat without feeling sick or like I need to nap afterwards. The rashes on my hands are gone (unless I get ‘glutened’) and my headaches are few and far between.

This is all new and difficult. But it’s also pretty exciting! Especially for Jonah because he looooves a good [s]mooooth[ie] bowl!

This morning’s run was FUN! We are on vacation in OBX so I set off on an adventure this morning and I found the Wright Brother’s Memorial! In all of the years that I lived and vacationed in Hatteras I have never been up to the top of this memorial. The view was so pretty that once I ran down I had to turn around and run back up again 😄 It’s always so much fun running in a new place! To think I would have missed this awesome morning if I hadn’t laced up my running shoes!

I have been working on cutting wheat out of my diet this past week because I believe I’ve developed some type of allergy to it. I’ve been having dermatitis on my hand and an eczema type rash on my arm and it seems to flair up when I eat foods with wheat 😩. Last Friday we had pizza and beer for dinner and the next morning it was soo bad and itchy!! So right now I’m focusing on what I eat even more to see if I can pinpoint were these reactions are stemming from. Tonight I made this beef Lo Mein with rice noodles and it was bomb! 😄 Have you ever had rice noodles? They are good good! I love the texture!

I used sirloin, broccolini, bell pepper, onion, carrot, and garlic for the veggie mix . The sauce, as usual, is where it’s at...

🥡1/2c soy sauce
🥡1TBS sesame oil
🥡1/2TBS brown sugar
🥡1/4tsp red pepper flakes
🥡1/4tsp black pepper
🥡1tsp grated ginger
🥡1tsp cornstarch (optional I just wanted it to thicken a little)
Whisk together and pour over the rest of your ingredients once they are cooked. Toss to coat and serve!

My favorite run bud!! He has always been so awesome on our runs and always gets stoked when I say ‘you wanna go running?!’ I just signed up for my first (virtual) 10K and I can’t wait to start training. Half because it’s finally cooling down so we can run longer and also because I am much more motivated when I have a schedule in front of me.

Anyone else excited for racing season?

How pretty is this juice y’all?! Jonah and I have been starting most mornings off with fresh juice and it has been so fun making different combinations. Jonah absolutely loves putting the ingredients in the juicer!

Juicing fruits and veggies makes it way easier for the body to absorb all of those wonderful vitamins and minerals!! This mornings recipe included clementines, pineapple, ginger, and purple carrots (hence that awesome color!)
