🫐My BLUE blueberry overnight oats!!!

Complete with chia pudding, fresh berries, and shaved coconut.

Old fashioned oats. Your choice of yogurt but make sure it has live cultures. Your choice of milk. Scoop of spirulina powder. Fresh blueberries. Vanilla extract. Real maple syrup for sweetness if desired. Mix. And let it culture overnight in fridge. Should hold up in fridge for about a week.✌️💚

I have a bit of a Disneyland addiction. 🤦‍♀️ unfortunately for obvious reasons we haven’t been able to go for two years now and I miss it. I know I’m lucky to have experienced it at all and it’s not for everyone. But I do find it to be a fun and magical place that I miss dearly.

So my husband and I have been doing dinners and treats at home inspired by the lands and food found at Disneyland.
The Adventureland experience meant Bengal BBQ inspired dinner and enjoying dole whips while watching Jungle Cruise.👏🤤 🥳
On the menu: Teriyaki veggie and tofu skewers, tiger tail breadsticks, pineapple spears, and of course homemade dole whips.
Easy Dole whip recipe: frozen pineapple, frozen mango, coconut milk, a touch of vanilla extract, and blend. ✌️💚

Thank you to my beautiful friend for the beautiful blackberries from her bushes. They went perfectly on my yogurt bowl.

My hubs made a mixture of yogurt, rolled oats, and cubed green apples. Which stays good in the fridge for a couple of days. So it’s an easy breakfast to make ahead. I topped mine with berries and grape nuts cereal today. ✌️💚

POTATO CAULI LEEK SOUP:||
Veggie broth, Yukon gold potatoes, cauliflower, leek, garlic, bay leaf, S&P.

Stew for about 30 mins give or take. Then add about a cup of coconut milk (not sweetened). Remove bay leaf. Blend all together, top with pumpkin seeds and green onion and enjoy! ✌️💚

WHOLE WHEAT SOURDOUGH PANCAKES:||
1cup choice of milk w/ 1tsp apple cider vinegar mixed in it
1/2cup sourdough starter
1-2Tbsp brown sugar
1Tbsp ground flaxseed
1tsp chia seeds
(Could also do an egg in place of seeds)
1cup whole wheat flour
1/2tsp baking powder
1tsp vanilla extract
1tsp cinnamon
Mix in order listed and cook on skillet. So much flavor all I needed was just a little peach butter and some fruit to dress them.
Thanks to my friend for sharing her sourdough starter with me. It’s been fun and delicious coming up with ways to use the throw out. ✌️💚

TOFU AND MUSHROOM FRITTATA:|| A win for brunch time thanks to the America’s test kitchen vegan cook book.
Super creamy, almost cheesy even though it doesn’t have cheese in it. I did add nutritional yeast to give more of that effect though. Served with some salsa or you could also do bruschetta and a side of toast with it. And there you have it, a fabulous brunch dish.
And FYI high in protein for those who worry about that.✌️💚

Have you ever made homemade sushi? What about veggie sushi? The best part is it’s an activity and meal wrapped up in one.
My creation was called The Sea-Swed:|| with pickled veggies, avocado, roasted sweet potato, cucumber, and lingonberry pepper jelly. A Swedish Japanese fusion that turned out delicious. Sweet and tangy.
Bonus tip for all you pregnant ladies who crave sushi. Get yourself some veggie sushi instead and your craving will be satisfied without the guilt trip. ✌️💚

Getting back on track:
My family got in a serious habit of eating takeout waaaay to much while I was down and out during my pregnancy and then also while adjusting to the new baby. So I’ve been working on being more consistent with making meals at home. And in order to keep myself motivated I thought I’d share some of my meals with you. Hopefully they help someone else to start introducing more plants into their meals.
Last night was RED CURRY SUMMER VEGGIES AND TOFU W/ MISO LENTILS.
Red curry:|| curry paste, can of coconut milk, a little red miso, topped with crushed peanuts, black sesame seeds, and fresh lime.
Lentils:|| 3 cups water, 1 cup lentils, 2 cloves of crushed garlic, Tbs red miso, bring to boil and simmer for about 20 mins, drain extra liquid. So freaking good. It was even a hit with my 6 year old.
And remember progress over perfection. All you need is one little change to make a difference.✌️💚

Sharing from .intuitivefitness because I love her message. It very much aligns with mine in the long hard battle against a world that praises fitness/ exercise addiction, image culture, and diet culture.

So if you’re someone struggling from our societies addiction culture and looking for support as you try to ease more into a more intuitive way of life I’d check out her page as another support and resources. Because it takes a lot of support to get beyond it.
