Getting back on track:
My family got in a serious habit of eating takeout waaaay to much while I was down and out during my pregnancy and then also while adjusting to the new baby. So I’ve been working on being more consistent with making meals at home. And in order to keep myself motivated I thought I’d share some of my meals with you. Hopefully they help someone else to start introducing more plants into their meals.
Last night was RED CURRY SUMMER VEGGIES AND TOFU W/ MISO LENTILS.
Red curry:|| curry paste, can of coconut milk, a little red miso, topped with crushed peanuts, black sesame seeds, and fresh lime.
Lentils:|| 3 cups water, 1 cup lentils, 2 cloves of crushed garlic, Tbs red miso, bring to boil and simmer for about 20 mins, drain extra liquid. So freaking good. It was even a hit with my 6 year old.
And remember progress over perfection. All you need is one little change to make a difference.✌️💚
