Well… this wasn’t on my 2026 bingo card. šŸ˜‚

The funny thing is, this didn’t actually start during meditation.

It started with a conversation.

Someone I work with someone I respect challenged me to look at a situation through a more compassionate lens. They didn’t criticize me or tell me I was wrong. They simply offered a different perspective.

At first I thought, ā€œPffft… I’m compassionate.ā€ šŸ˜‚

Then I sat with it.

A couple of days later, while I was meditating, it was like someone turned on a giant light switch.

For years I’ve thought I knew my purpose. I was convinced it had something to do with nutrition. Or art. Or teaching people how to ferment weird things in jars. šŸ«™šŸ˜‚

Helping people? Absolutely.

But I may have been wrong about how.

Here’s the embarrassing part…

I’ve always considered myself empathetic, kind, and thoughtful. Compassion, though? That’s been a work in progress. My default setting has historically been somewhere between, ā€œWalk it off,ā€ and ā€œPut your big girl panties on and let’s figure this s**t out.ā€ šŸ¤¦šŸ¼ā€ā™€ļøšŸ˜‚

Apparently the universe looked at me and said…

ā€œAww… that’s cute. We have other plans.ā€

I realized I wasn’t drawn to my job because of the nutrition.

Nutrition got me through the door…

The people are why I’m there.

Maybe I’m there to remind someone they’re worthy.

Maybe I’m there to encourage them.

Maybe I’m there to help someone see what they can’t yet see in themselves.

And maybe… I’m there to learn compassion myself.

I’ve also started realizing that most people aren’t trying to hurt us.

They’re simply responding from what life has taught them. Just like our parents. Just like our coworkers. Just like us.

That thought alone has softened something in me.

A week ago I was convinced I was in the wrong place.

Now I’m wondering if it’s exactly where I was supposed to be.

And if a few other people happen to feel a little more seen along the way…

Well, that’s a pretty incredible bonus. ā¤ļø

Now don’t get me wrong… I’m sure the universe is already planning my next lesson. It has a slightly twisted sense of humor. šŸ˜‚

This morning I filled a few pages in this notebook.

I wasn’t writing a business plan.

I was writing down what I believe.

Somewhere between those pages, I realized something.

I don’t just want Simply Well to be about nutrition.

I want it to be a place that helps people slow down, stay curious, and notice the beauty in everyday life.

Sometimes that beauty is nourishing food.

Sometimes it’s a bird singing outside your window.

Sometimes it’s creating something with your own hands.

Sometimes it’s found in the simplest, quietest moments.

I’m still figuring out exactly where this journey will take me, but one thing feels certain…

I want to help people notice.

Simple Meal Prep That Actually Works

Garlic Herb Chicken, Rice & Roasted Veggies

A balanced meal doesn’t need to be complicated. This is affordable, high protein, easy to digest, and perfect for busy weeks.

What You Need:

• Chicken breast or thighs
• Olive oil
• Garlic
• Italian seasoning
• Salt + pepper
• Rice or potatoes
• Broccoli, zucchini, carrots, or green beans

How to Make It:
1. Season chicken with olive oil, garlic, Italian seasoning, salt, pepper.
2. Bake at 400°F until cooked through.
3. Roast vegetables on another tray with olive oil and seasoning.
4. Cook rice or potatoes.
5. Portion into containers for 3 to 4 days.

Why It Works:

• Protein supports muscle + satiety
• Carbs support energy
• Vegetables support digestion + nutrients
• Simple meals reduce stress and poor choices later

Sauce Ideas to Change the Flavor All Week:

Monday: Greek yogurt ranchāž”ļøGreek yogurt, dill, garlic, lemon, salt

Tuesday: Lemon tahiniāž”ļøTahini, lemon juice, water, garlic

Wednesday: Honey mustardāž”ļøGreek yogurt, Dijon, touch of honey

Thursday: Spicy yum yum lightened upāž”ļøGreek yogurt, sriracha, garlic, lime

Friday: Salsa avocado crema āž”ļøSalsa, avocado, Greek yogurt, lime

Bonus: Pesto drizzle, hummus thinned with water, buffalo yogurt sauce, chimichurri, tzatziki

One meal prep base + different sauces = less boredom, more consistency.

Meal prep doesn’t need to be fancy. It needs to be ready when life gets busy.

You don’t need a full reset.
You just need a little preparation.

A few basics done ahead of time can change your entire week:
• cook one protein (chicken, ground beef, eggs)
• prep one carb (rice, potatoes, quinoa)
• wash and cut a few vegetables
• keep a healthy fat on hand (avocado, olive oil)

That’s it.

No complicated recipes.
No starting over.

And also… it’s okay if you don’t do all of this yourself.

Having support is part of consistency.
Even I keep prepared meals in my freezer for busy days—I’ve used options from Clean Eatz when I’m in a pinch.

It doesn’t have to be perfect to be effective.

Consistency comes from making things easier… not harder.
