The ultimate morning time-saver! 🍳 By prepping your veggies the night before, this healthy Sweet Potato Breakfast Hash comes together in just under 30 minutes. It’s the perfect budget-friendly recipe to clear out whatever random veggies you have left in your fridge!

πŸ₯” THE NIGHT BEFORE PREP (To save time & prevent browning):
- Peel and dice your sweet potato.
- Submerge the diced potatoes in a bowl of cold water and store in the fridge overnight (this removes excess starch and keeps them from turning brown!).
- Dice your onion and bell peppers, and store them in a separate container.

β˜€οΈ THE MORNING OF:
1. Drain and thoroughly dry the diced sweet potatoes.
2. Toss potatoes with olive oil, salt, and pepper.
3. Air fry at 380Β°F (193Β°C) for 10 minutes.
4. Add the diced onions and bell peppers to the air fryer pan with a little more olive oil, shake, and air fry for another 10 minutes.
5. While the hash finishes cooking, fry 2 eggs in a pan until the whites are set but the yolk is still beautifully runny.
6. Plate the hash, top with your fried eggs, and garnish with fresh cilantro, everything bagel seasoning, and a drizzle of chipotle pepper sauce.

For lunch I guess this would be an impromptu Mediterranean inspired meal consisting of: 1 packet Starkist Herb and Garlic Tuna, 89 grams cucumber slices, 25 grams red bell pepper, 1 tbsp olive oil, lemon juice, 45 grams feta cheese, 9 ritz crackers. All these ingredients I pulled together and prepped last night to not waste leftover food and it literally paid off bc money saved! πŸ˜‰πŸ€‘

Egg Guacamole Wrap for breakfast today - 2 hardboiled eggs, 1 small container chunky guacamole, diced bell peppers which I rolled inside a Tomato Basil Wrap. I ate this at 9:30A and it's currently 12:00P and I'm still full. πŸ˜‰

This simple, balanced meal provided:

This was an easy meal prep I made the night before by boiling and cooling the eggs overnight in the refrigerator. In the morning I added all the ingredients together in the wrap right before heading to work. If there's time in your evenings & mornings...make your health a priority.

This has been my brekkie for the past two days - Sweet potato hash with onion, yellow and orange bell peppers, fried eggs, cilantro, Everything Bagel seasoning and Chipotle Sauce. Pics before and after the eggyolk break which was actually pretty tasty! πŸ˜‹ I'm using up the last of my veggies so they don't spoil to save money and not waste food. Food costs are high and I'm using up what we have before I head back to the store.

*Sidenote: food with lots of color and flavor makes you want to eat it! πŸ˜‰
