The ultimate morning time-saver! π³ By prepping your veggies the night before, this healthy Sweet Potato Breakfast Hash comes together in just under 30 minutes. Itβs the perfect budget-friendly recipe to clear out whatever random veggies you have left in your fridge!
π₯ THE NIGHT BEFORE PREP (To save time & prevent browning):
- Peel and dice your sweet potato.
- Submerge the diced potatoes in a bowl of cold water and store in the fridge overnight (this removes excess starch and keeps them from turning brown!).
- Dice your onion and bell peppers, and store them in a separate container.
βοΈ THE MORNING OF:
1. Drain and thoroughly dry the diced sweet potatoes.
2. Toss potatoes with olive oil, salt, and pepper.
3. Air fry at 380Β°F (193Β°C) for 10 minutes.
4. Add the diced onions and bell peppers to the air fryer pan with a little more olive oil, shake, and air fry for another 10 minutes.
5. While the hash finishes cooking, fry 2 eggs in a pan until the whites are set but the yolk is still beautifully runny.
6. Plate the hash, top with your fried eggs, and garnish with fresh cilantro, everything bagel seasoning, and a drizzle of chipotle pepper sauce.
