This salad carries so much history in one bowl ❤️

While recipes vary from country to country, beet salads like this have been part of Slavic cuisine for generations — from Russia and Ukraine to Poland, Belarus, and beyond. Simple ingredients, hearty flavors, and the kind of dishes that get passed down around family tables.

This version comes from Diana Belenky and combines beets, potatoes, carrots, pickles, peas, sauerkraut, and fresh parsley for a salad that is earthy, bright, and deeply comforting.

Russian / Slavic Beet Salad

2 beets
3 carrots
3 pickled cucumbers
4 potatoes
1 onion
1 can sweet peas
1½ cups sauerkraut
Salt + black pepper
Olive oil
Fresh parsley

Cook vegetables until tender, chop everything into small pieces, then toss together with olive oil, salt, pepper, and parsley.

Simple, nourishing, and full of tradition.

This is the kind of treat that feels a little too easy. ♥️

Grain-free, naturally sweetened with honey, and you can either bake them… or eat them straight as cookie dough truffles (no judgment here).

They’re soft, rich, and just customizable enough to make them your own.

SCD Cookie Dough Truffles

¼ cup palm shortening
¼ cup honey
2 tsp extract (vanilla, almond, or citrus)
1½ cups almond flour
½ tsp sea salt
¼ cup chocolate chips (optional)

Mix everything together until smooth.

From here you can:

👉 Roll into truffles and coat in chocolate
👉 OR bake at 350°F for 8–10 minutes

Some fun flavor ideas:
• Almond blossom
• Orange cardamom
• Lavender chocolate chip
• Spearmint crinkle
