Egg white breakfast cups

INGREDIENTS:
2 cups spinach
½ cup roma tomatos
2 cups egg whites
¼ teaspoon Salt
½ teaspoon pepper

PREPARATION:
1. Preheat the oven to 350˚F/180˚C.
2. Lightly grease a muffin tin, then divide equally the spinach, tomatoes, and egg whites across 6 cups. Season with salt and pepper.
3. Bake for 15 minutes, or until the whites have set.
4. Serve hot.
5.Enjoy!

Crab cakes

3 servings
1 leaner
3 condiments
1 healthy fat

Ingredients:
14 oz crabmeat
3 eggs
1 Tbsp parsley
2 tsp Dijon mustard
2 tsp lemon juice
1 ½ Tbsp almond flour
¾ tsp old bay – Maryland-style crab seasoning
1 Tbsp light mayonnaise
½ tsp Worcestershire sauce
2 tsp olive oil for frying

Directions:
Preheat oven broiler. Mix together crabmeat, parsley, almond flour, and crab seasoning. Beat together egg, mayonnaise, Worcestershire sauce, mustard, and lemon juice. Form into patties and place on a lightly greaser broiler pan or baking sheet.
Broil for 10-15 minutes, until lightly brown

Spinach Crust Pizza

Makes 1 servings
Per serving:
1 Lean protein
3 vegetables
3 condiments

Ingredients:

Crust
2 cups spinach leaves
1 egg
1 cup shredded low fat Italian cheese blend
1/8 teaspoon salt,
1⁄4 teaspoon pepper

Pizza Sauce
3⁄4 cup chopped grape tomatoes
1 clove garlic

Toppings
1/4 cup green onion, diced
1 tsp shredded Parmesan cheese

Directions:
-Preheat over to 425
-Use either pizza sheet, or cookie sheet, cover with parchment
-Spray parchment generously w/nonstick spray
-Blender spinach and egg until it’s a baby food consistency
-Add in cheese and spices and pulse until just combined.
-Spread thinly on the parchment paper
-Bake for 15 minutes. Edges should start getting brown and crispy
-Pizza sauce: placing tomatoes and garlic in blender and pulse until smooth.
Spread evenly over crust.
Top w/remaining cheese and green onions
-Place in oven and broil until cheese is melted
