Healthy “Chick-fil-A Sandwich” 🐓 🥪

Pickle Juice Air Fried Chicken

Ingredients
9.1 oz chicken breasts (to yield 6 oz cooked)
3 tbsp liquid egg substitute
1.5 tbsp almond flour
2 tbsp Parmesan cheese
Pepper
Fresh thyme for garnish

The day before place raw chicken in a bowl and fill with pickle juice. Make sure it covers the breasts. Marinate in refrigerator overnight. Preheat air fryer at 400° for five minutes. Mix the pepper, flour and Parmesan cheese in another bowl. Take each piece of chicken and pat dry. Dip the chicken in the egg bath and let drain off a bit. Then batter the chicken in the mixture of almond flour, pepper and cheese. Spray a piece of parchment paper with nonstick spray, place the chicken on it and then into the air fryer. Cook at 400° for 15 to 18 minutes, flipping when there’s about five minutes left.

Beef with Broccoli 🥦 on Cauliflower Rice: Serves 2

Ingredients:
1 lb raw beef round steak, cut into strips. (You want 10 Oz cooked)
1 Tbsp + 2 tsp low sodium soy sauce
1 Stevia packet (optional) or sweetener of choice
1/2 C water
1 1/2 C broccoli florets (should yield 1 cup cooked)
1 tsp sesame or olive oil
2 Cups cooked, grated cauliflower or frozen riced cauliflower

Directions:
Toss steak with soy sauce and let sit 15 min.
Heat oil over medium high heat and stir fry beef for about 5 min or until browned. Remove from pan.
Add broccoli, water, and Stevia. Cover and cook 5 min or until broccoli is starting to turn tender, stirring occasionally.
Add beef back in and warm thoroughly. Serve over cauliflower rice.

Buffalo a n y t h i n g and I’m ALL IN !!!

Buffalo Chicken Stuffed Peppers🍗 🌶

Ingredients:
12 ounces cooked chicken breasts, chopped or shredded
1/2 cup celery, chopped
1 cup reduced fat sharp cheddar cheese, divided
3 tbsp reduced fat cream cheese
1/4 cup Frank's hot sauce
1/4 cup light ranch dressing
4 bell peppers any color, each cut in half from stem to base,
tops and seeds removed

Directions:
Preheat oven to 400 degrees.
Slice the tops of the peppers, horizontally like a lid.
Cut the peppers in half from top to bottom. Remove the seeds and membranes.
Lay pepper halves on baking sheet and cook 8 to 10 minutes if you prefer al dente peppers,
or 10 to 15 minutes if you prefer soft peppers.
Combine, chicken, celery, 1/2 cup cheese, cream cheese, Frank's hot sauce,
and ranch dressing in a large bowl. Stir until combined.
Stuff your peppers with the chicken mixture. Then top with 1 tbsp of cheese per pepper half.
Return the peppers to the oven and bake for an additional 10 minutes
or until cheese is melted.

Crispy Zucchini Chips 🥒 My favorite summer snack

Ingredients:
1 1/2 cups zucchini (3 Greens)
1 teaspoon olive oil (1 Healthy Fat)
1/8 tsp sea salt (1/4 Condiment)

Directions:
Preheat oven to 200 degrees. Line a large baking sheet or two small baking sheets with parchment paper. Spray lightly with cooking spray. Place zucchini slices in a single layer on parchment paper. Bake for 3 1/2 to 4 hours until desired crispness, turning zucchini slices occasionally.

Servings: 3 Greens, 1 Healthy Fat and 1/4 Condiment

Buffalo Cauliflower 🔥 this is an easy summer recipe! You can also air fry your cauliflower like I do!!! 🙌🏻

Ingredients:

6 cups (21.12 oz) cauliflower florets (12 greens)

2 tsp garlic powder (4 condiments)

1/4 tsp salt (1 condiment)

1/2 tsp pepper (1 condiment)

1 tbsp butter, melted (2 healthy fats)

¾ cup Frank’s RedHot hot sauce (6 condiment)

Directions:

Preheat oven to 450 degrees and place cauliflower on a baking sheet. Sprinkle garlic powder, salt, and pepper over florets. Bake for 20 minutes. Combine the melted butter and hot sauce into a small bowl. Pour over the florets and bake for 5 more minutes. Serve hot.

Makes 4 servings

Per serving: 3 vegetables, 3 condiments, ½ healthy fat

Teriyaki Salmon Bites 🎣

Ingredients:

14 oz of Salmon Fillets or 10 oz. cooked (2 leans)

1/4 cup (.88 oz) Scallions cut (1/2 green)

3 Tbsp. Low Sodium Soy Sauce (3 condiment)

2 tsp Fresh Ginger Root grated (1 condiment)

1/4 tsp. Red Pepper Flakes (1/2 condiment)

1/4 tsp. Garlic Powder (1/2 condiment)

1 tsp Sesame Seeds (1 condiment)

Directions:

Cut Salmon into bite size pieces, about 1” each and set aside.

In a large bowl add the soy sauce, ginger root, red pepper flakes, garlic, and mix well.

Add the salmon bites into the bowl with the marinade, cover and let it sit for 10-15 minutes.

In a large skillet over medium heat add the marinade, and arrange the salmon pieces into a single layer and cook in the sauce for a couple of minutes on that side until that side is crispy (2-3 min). Carefully flip the salmon bites and continue to cook until salmon bites form a thin crust and that other side, about 2-3 more minutes (don’t fuzz too much with them or they will break apart)

Serve on a platter and drizzle the left over sauce (if any). Sprinkle with sesame seeds.

Ground Beef Cauliflower Hash
4 servings; per serving:
1 Lean, 1 1/2 Greens, 2 Condiments

Ingredients:
2 1/2 Cups frozen cauliflower, thawed, drained, and chopped
1/2 cup any color bell pepper, chopped
1/4 cup onion, chopped
14 ounces 85-94% lean ground beef, raw
2 Cups reduced fat cheddar cheese
1 Teaspoon garlic powder
1/4 Teaspoon salt
1/4 Teaspoon pepper

Directions:
Brown the ground beef with onions over medium high heat for about 5 to 7 min. Add peppers and continue cooking for 5 to 7 more minutes or until cooked through. Drain the grease.
Add it back to the pan along with the cauliflower, garlic, salt and pepper. Cook and stir until cauliflower is tender.
Add cheddar cheese on top of the cauliflower and beef mixture. Turn heat to low, cover pan with a lid, and allow cheese to melt.
