Every day I have an avocado, I chop it up in the morning, mix it with salt, and by lunch it's turned brown in the container. Remix it — green again. I can't be the only one who's wondered why. 🥑

It's called enzymatic browning. Avocado has an enzyme (polyphenol oxidase) that reacts with oxygen the second it's cut — same thing that browns an apple or banana. It's not going bad, it's just oxidizing.

The browning is only surface-deep. When you stir it, you're folding that thin oxidized layer back into the green underneath — it's not un-browning, it's just getting diluted and buried again.

Bottom line: brown ≠ bad. Judge it by smell and texture, not color. And salt barely slows the browning — lemon or lime juice actually does that.
