Spaghetti squash for me and proteinpasta for the boys- with cacio e pepe sauce and fresh zested lemon, Parmesan reggiano grate, sautéed shiitake mushrooms, and pesto marinated chicken thighs, and we what we refueled with today after a long day of being outside In the cold, and inside making the most of this time off. Sometimes God gifts us the things we resist but rarely do have the chance to take so take it and run!
