Tofu tastes like...well, nothing. 😒 So how can you be tempted to try it?
First, let's make the case for including tofu in your diet. Tofu is celebrated as a plant-based protein superhero - with good reason. Half a cup has 10g of protein! You also get 43% of your DV of calcium. Calcium? Yes! Tofu is processed with calcium - a nice benefit for those avoiding dairy. This serving of tofu is also an excellent source of iron 💪- 36% DV.
Now, adding flavor. The wonderful thing about tofu is that it has very little flavor which means it will take on the flavor of whatever you add it to. You can add extra-firm versions to well-seasoned curries, soups, and stir-fries. If you prefer sweets, silken tofu can be used to make puddings and smoothies. Or enjoy as a scramble with plenty of veggies and spices:
➡️ INGREDIENTS
✅ 1 red bell pepper, diced
✅ 1/4 cup sweet onion, chopped
✅ 1 lb tofu, extra firm, drained and crumbled
✅ 4 cup spinach, chopped
✅ 1/2 cup basil leaves, chopped
✅ 2 tsp chili powder
✅ 1 tsp cumin, ground
✅ 1/2 tsp turmeric
✅ hot sauce (optional)
DIRECTIONS:
➡️ Prep
✅ Dice pepper, chop onion and spinach.
✅ Drain and crumble tofu.
➡️ Make
✅ In a bowl, add crumbled tofu, chili powder, cumin, and turmeric, and massage until spices are well incorporated. Set aside.
✅ Spray sauté pan lightly with oil add onions and peppers. Sauté until soft.
✅ Add tofu and sauté until warmed through, about 5 minutes.
✅ Add spinach and basil to pan and season with salt to taste.
✅ Top with hot sauce if desired.
NUTRITION PRO TIP: While evidence suggests that WHOLE soybean products like tofu, tempeh, and edamame are healthy and cancer-preventative if you are soy-concerned - you can replace them with other beans.
