A company called The Every Co. has scaled up its animal-free egg protein, OvoPro, made through precision fermentation using engineered microorganisms rather than chickens.

It’s now used as an ingredient in products sold at Walmart, Target, and Amazon, with orders up 550 percent in early 2026. This is a different process than lab-grown or cultivated meat, no animal cells are involved at all, and it currently shows up as an ingredient in other foods rather than as a standalone product on shelves.

Where has Jocelyn been?

Jocelyn shares what life looks like behind the scenes as a retreat chef, from planning and sourcing to preparing meals and creating memorable food experiences for guests.

But the journey does not end when the retreat is over. Jocelyn talks about bringing those experiences, ideas and energy back home to Pueblo, including SoulSmile Health & Wellness' involvement in community events such as Palmer Land Conservancy’s Bike the Bessemer in September.

The conversation then turns toward what is coming next with Jocelyn in the Wild, a new on-location adventure that will take Jocelyn and Gregory out of the studio and directly to the farms, farmers and producers who help feed our community.
