Back to Basics: slow cooker meals⁠

Home cooking is generally healthier for you and almost always more economical. While I’m sure most of us cooked at home more this past year than we wanted too, remembering that yummy healthy meals don’t have to be complicated or time consuming is helpful to keep you on track with your lifestyle goals. ⁠

This photo shows a slow cooker pot roast (grass fed/finished meat from a local farmer) with rainbow carrots 🥕 and fingerling potatoes (veggies also locally grown). Add some spices to flavor the meat and bone broth or water. Cook on high for 6-8 hours and a wonderful dinner awaits you at the end of the day. Quick to prepare. Smells amazing while cooking. Full of nourishing goodness.⁠

Yesterday was atrocious. Many days last year were atrocious. Our history as a nation has so many atrocities. I can’t change or influence much, but I will focus on what I can do. I will keep hope for a brighter future, for a time when all humans listen to each other even when we disagree. I choose to side with truth, peace and love. I will do what I can personally and support others in their dedicated service, so collectively we can accomplish more. May my optimism not be crushed again. We have to be better than this.

Back to Basics: homemade applesauce 🍎🍏

Another whole food treat that is super simple to make is applesauce. All you need are apples + water + time... okay maybe a pot and a stovetop too.
Cut up the apples, add some water so they don’t burn, and cook them down until they are soft. You can eat as is with the larger chunks, mash them down by hand, or use a mixer, blender or food processor to fully purée. Choose your preference or change it up batch by batch. Add cinnamon during cooking or after for extra flavor.
Applesauce also freezes really well, so make a big batch and save some for later... or to share with friends.
Simple. Cheap. And oh so yummy!

It’s Back to Basics time. Making improvements to our health doesn’t have to be complicated, require tons of time or feel like hard work. Starting with small, simple changes and reveling in the success you achieve is a much better motivator for continuing to make lifestyle changes.
This week let’s focus on real food. Foods without a label. It can be as simple as eggs for breakfast. Roasted veggies for dinner. A colorful salad for lunch. Don’t complicate it. Start with eating one meal, once a week with the real foods you already enjoy. Over time you can build up to eating more real food (without labels and straight from the garden) more often.
Slow and steady wins the race. Health is a lifetime journey, not a short-term fix to get through.

Happy New Year! Have you taken the time to set an intention for 2021? I prefer intention setting over resolutions and find it quite valuable to spend time reflecting on the learnings of the previous year before intentionally setting the tone for my year ahead. I’m always amused at the surprising ways the intention plays out by the end of the year. My intention (sankalpa) for 2021 is Relax & Release. I’d love to know your intention, mantra, resolutions, or goals for 2021. Please share in the comments!

I love when my vegetable garden continues producing late into fall. Here in Michigan we have had several frosts already and couple days of sporadic snow, yet these hardy cool weather veggies have stayed strong.

This bounty includes mostly chard and carrots with a few red kale leaves that were spared from too many cabbage worm holes. The chard and kale were dried out and ground down into a “super greens” powder that will be added to recipes throughout the winter for extra nutrition. This powder is a good way to get more greens into your kids’ diet too! Any dark leafy greens can be used to make a dried greens powder, and I continue to add to the jar throughout the season.

Blueberries are another amazingly nutritious, antioxidant-rich food that can enhance brain, heart and eye health, and improve our immune system. Blueberries are high in vitamins C & K, manganese, and fiber — aiding digestion and weight loss — and also contain many other important micronutrients

This is my first year growing blueberries at home and I’ve been pleasantly surprised with the yield from these two young, small bushes. We had a few weeks overlap of ripe raspberries, strawberries and blueberries... such a yummy treat! I love growing and eating food straight from our garden.

These beauties sure look happy in my garden right now. Packed full of nutrients, Swiss Chard is another amazing leafy green (like kale and spinach) that also helps you "eat the rainbow" if you consume their colorful stems. Chard contains a wide range of vitamins (K, A, C, E), minerals (magnesium, potassium, iron, copper, calcium), and antioxidants supporting health in a variety of ways: protecting heart, eye, bone and skin health; helping control blood pressure levels; improving digestion; reducing inflammation; helping regulate blood sugar levels and promoting pancreatic beta cell regeneration. Chard can be eaten raw or cooked and is a great addition to homemade green juice or smoothies.

This is my compost bin. No, it shouldn't look like this. I "should" be turning the pile often to mix everything in, generate heat, and encourage all those fabulous microbes to do their job of breaking down the components into nutrient rich soil. BUT... when the sprouts start and look so happy and healthy growing in that miraculous soil, I just can't bring myself to chop them down and turn them under. This is the second year in a row that I've had amazing results from my compost pile. The first "fruits" of this pile are decorative gourds (shown in the inset photo), along with some cilantro I that harvested a few weeks ago. Gardening and composting can teach us so much... with different lessons every year. Does anyone else let their compost piles grow or am I the only crazy one?!

These beauties certainly live up to their name, always filling my heart with gladness and bringing a smile to my face. I love watching each bloom emerge from the innocuous green pods, erupting in a cascade of glorious color. The fleeting nature of these and many other blooming flowers is a great reminder to enjoy the present moment... the beauty of all that is here now.
